Profiteroles with Chocolate Sauce

Profiteroles bring together the best qualities of choux pastry: crisp, hollow shells, a light interior and a filling that turns them into a proper dessert rather than a simple bake. In the French tradition they are often served as small cream-filled buns with a glossy chocolate sauce poured over just before serving, giving a pleasing mix of cool cream, delicate pastry and warm, dark chocolate. This version keeps the preparation classic and practical, with whipped vanilla cream for softness and a simple cream-based chocolate sauce for a smooth finish. They suit a dinner-party pudding but are equally good made ahead as unfilled shells and assembled close to serving.

Why this recipe works

  • Classic texture contrast: Crisp choux shells, soft whipped cream and warm chocolate sauce give the dessert its signature balance of lightness and richness.
  • Reliable choux method: Cooking the flour mixture briefly before adding the eggs helps dry the dough, encouraging the buns to puff and form hollow centres.
  • Easy to stage ahead: The unfilled shells can be baked in advance, refreshed until crisp, then filled and sauced shortly before serving.

Texture tips

  • Bake until deeply golden: Pale choux tends to soften quickly. Look for a firm, deep golden shell before removing the buns from the oven.
  • Release the steam: Piercing the baked buns allows trapped steam to escape, helping the centres dry rather than collapse or turn damp.
  • Add the eggs gradually: Beat in the eggs one at a time and stop when the paste is glossy and drops in a thick V shape; this helps keep the dough pipeable and airy.

Timing notes

  • Cool before filling: Let the buns cool enough before adding the cream, otherwise the filling can loosen and lose its volume.
  • Fill close to serving: Profiteroles are at their best soon after filling, while the shells still have some crispness.
  • Best eaten fresh: Filled profiteroles can be refrigerated briefly, but the texture is best on the day they are assembled.

Make-ahead tips

  • Bake the shells ahead: Unfilled choux buns can be stored airtight at room temperature for up to 1 day before filling.
  • Refresh before filling: Re-crisp stored shells in a 180°C (355°F) oven for a few minutes, then cool before adding the cream.
  • Freeze unfilled buns: Freeze the baked, unfilled shells, then defrost at room temperature and refresh in the oven before assembling.

Common mistakes

  • Taking the shells out too early: Underbaked choux may look puffed but can collapse as it cools. The shells should feel crisp and sound slightly hollow.
  • Adding too much egg: The dough should be glossy and thick enough to hold its shape when piped. If it becomes too loose, the buns may spread.
  • Boiling the sauce cream: Warm the cream until steaming, then remove it from the heat before adding the chocolate to keep the sauce smooth and glossy.

  1. Heat the oven to 200°C (390°F) and line a baking tray. Put the milk, butter and the smaller amount of caster sugar for the choux into a saucepan and heat gently until the butter melts, then bring to a brisk simmer.
  2. Tip in the flour all at once and beat vigorously with a whisk until the mixture forms a smooth ball and pulls away from the sides. Keep beating over a low heat for 1 minute to dry it slightly, then scrape into a mixing bowl and leave for 5 minutes to cool a little.
  3. Beat in the eggs one at a time until you have a smooth, glossy paste that drops from the whisk in a thick V shape. Spoon into a piping bag and pipe 12 to 16 small mounds onto the tray, leaving space for spreading.
  4. Bake for 20 minutes, then reduce the oven to 180°C (355°F) and bake for 10 to 12 minutes more until deep golden and crisp. Turn off the oven, pierce each bun with the tip of a knife to release steam, then leave them in the switched-off oven with the door slightly ajar for 5 minutes to dry out.
  5. Whip the larger amount of double cream with the vanilla extract and the caster sugar for the filling until it holds soft peaks. Once the buns are cool enough to handle, split them or make a small hole in the base and fill with the whipped cream.
  6. For the sauce, warm the remaining double cream with the caster sugar in a saucepan over a low heat until steaming but not boiling. Remove from the heat, add the dark chocolate and stir until smooth and glossy.
  7. Serve the filled profiteroles warm or at room temperature with the chocolate sauce poured over. If the sauce thickens, warm it gently for 30 to 60 seconds, stirring until pourable.

Recipe notes

Tips

  • For the crispest shells, make sure the buns are a deep golden colour before you take them out, and always pierce them to let the steam escape.
  • If you want a neater finish, fill the buns through a small hole in the base using a piping bag fitted with a small nozzle.
  • Food safety: this recipe contains eggs. If serving to pregnant people, young children, older adults, or anyone with a weakened immune system, use eggs that are safe for raw or lightly cooked preparations.

Substitutions

  • Replace Vanilla extract with 1 tsp madagascar-vanilla-paste for a more intense vanilla flavour.
  • Replace Dark baking chocolate with dark-chocolate-chips for a quicker-melting sauce.

Storage

  • Refrigerate up to 1 days
  • Store unfilled profiteroles in an airtight container at room temperature for up to 1 day, then refresh in a 180°C (355°F) oven for 4 to 6 minutes to re-crisp. Filled profiteroles are best eaten the same day; if needed, refrigerate and serve within 24 hours. Freeze unfilled profiteroles for up to 1 month, defrost at room temperature, then re-crisp in the oven before filling.
