Methi Thepla (Gujarati Fenugreek Flatbreads) with Mango Pickle

In Gujarati cooking, methi thepla are thin, soft flatbreads flavoured with fresh fenugreek leaves and warming spices. Wholemeal dough gives them a lightly nutty base, while turmeric, cumin, ajwain, hot paprika and lemon add colour, savoury depth and a fresh edge. Cooked quickly on a hot tawa or frying pan with a little oil, they should be pliable with browned speckles rather than crisp. Served warm with mango pickle or chutney, they make a practical lunch, snack or travel-friendly bread, with enough flavour to eat on their own and enough structure to pair with dals, yoghurt-style sides or vegetable dishes.

Why this recipe works

  • Layered savoury flavour: Fenugreek, ajwain, cumin and turmeric give the flatbreads a distinctive herbal, earthy and aromatic character.
  • Freshness in the dough: Lemon zest and juice lift the wholemeal flour and spices, keeping the flavour bright rather than heavy.
  • Good for making ahead: Thepla reheat well in a dry pan and can be frozen between sheets of baking paper for later meals.

Ingredient notes

  • Fresh fenugreek matters: Use fresh methi leaves where possible for their recognisable slightly bitter, herbal flavour; dry the leaves well after washing so the dough does not become sticky.
  • Ajwain adds the classic aroma: Ajwain has a thyme-like, peppery fragrance that works especially well with wholemeal flour and fenugreek.

Adjust the heat

  • For gentler heat: Use mild chilli powder or reduce the hot paprika while keeping the turmeric, cumin and ajwain for flavour.
  • For more warmth: Increase the chilli element gradually, then balance with extra lemon at serving if the flatbreads need brightness.

Texture tips

  • Aim for a firm, pliable dough: Add water gradually; the dough should roll easily without feeling wet or slack.
  • Avoid excess moisture: Wet fenugreek leaves can make the dough sticky, so shake them dry thoroughly before chopping.

Make-ahead tips

  • Store after cooling: Cool the thepla completely before refrigerating in an airtight container to help prevent condensation.
  • Freeze for later: Freeze cooked thepla with baking paper between them, then reheat from frozen in a frying pan until piping hot.
  • Reheat in a pan: Warm in a dry frying pan over medium heat until hot and flexible again; this gives a better texture than microwaving.

  1. Wash the fresh fenugreek leaves well, then shake dry and finely chop. Zest the lemon, then squeeze the juice.
  2. In a mixing bowl, combine the whole wheat flour, fine sea salt, ground turmeric, ground cumin, ajwain seeds and hot paprika. Rub in 1 tbsp of the sunflower oil with your fingertips, then mix in the chopped fenugreek, lemon zest and 1 tbsp lemon juice.
  3. Add the water gradually and bring together into a firm, pliable dough. Knead for 3 to 4 minutes until smooth, then cover and rest for 10 minutes so the flour hydrates.
  4. Divide the dough into 6 equal pieces and roll each into a ball. Roll out each ball into a thin round, about 16 to 18 cm across, dusting lightly with flour if it sticks.
  5. Heat a large frying pan over medium-high heat. Cook one thepla for about 30 to 45 seconds per side until light brown spots appear, then brush with a little sunflower oil and cook 20 to 30 seconds more per side until speckled and cooked through. Repeat with the remaining thepla, keeping them warm as you go.
  6. Serve the thepla warm with mango chutney on the side. Add a final squeeze of lemon juice over the top if you like it brighter.

Recipe notes

Tips

  • If the fenugreek leaves are very wet, the dough can turn sticky; dry them well after washing and add the water slowly.
  • Keep cooked thepla warm in a low oven at 120°C (250°F) while you finish the batch.
  • For anyone who is pregnant, elderly, or immunocompromised, use a pasteurised mango chutney and keep the thepla piping hot when serving.

Substitutions

  • Replace hot paprika with mild chili powder for a gentler heat.
  • Replace sunflower oil with olive oil for a fruitier flavour.

Storage

  • Refrigerate up to 3 days
  • Cool the thepla completely, then refrigerate in an airtight container. Reheat in a dry frying pan over medium heat for 30 to 60 seconds per side until hot, or freeze with sheets of baking paper between them and reheat from frozen in a pan until piping hot.
