Vegetarian Risotto Primavera

Risotto primavera brings the creamy, gently flowing texture of Italian risotto together with the fresh character of green vegetables. Arborio rice is cooked slowly with hot vegetable stock so its starch creates a silky sauce, while asparagus, courgette and peas are added near the end to keep them bright and tender rather than overworked. White wine gives the base a little depth, then parmesan, butter and lemon finish it with savoury richness and lift. It is best served immediately, when the rice still has a slight bite and the risotto relaxes softly on the plate.

Why this recipe works

  • Classic risotto method: Adding hot stock gradually helps the Arborio rice release starch, creating a naturally creamy texture without relying on cream.
  • Bright finish: White wine and lemon balance the richness of butter and Parmesan, keeping the risotto fresh rather than heavy.
  • Soft, flowing texture: Finishing with butter and cheese off the heat gives the risotto a glossy, cohesive consistency.

Timing notes

  • Serve straight away: Risotto is at its best shortly after cooking, while it is still loose, creamy and gently flowing.
  • Brief off-heat rest: A short rest after adding butter and Parmesan helps the finish become glossy without overcooking the rice.

Texture tips

  • For a creamier finish: Stir often enough to encourage the rice to release starch, and loosen with a little extra hot stock if the risotto tightens.
  • Keep the vegetables fresh: Add the asparagus, courgette and peas near the end so they stay tender and bright rather than soft and dull.

Ingredient notes

  • Use risotto rice: Arborio rice is important here because its starch helps create the creamy texture associated with risotto.
  • Balance the lemon: Add lemon juice off the heat and taste as you go, so it lifts the Parmesan without making the risotto sharp.

Ingredient swaps

  • Without white wine: Use extra hot vegetable stock in place of the wine for an alcohol-free version, adding it at the same stage.
  • Alternative hard cheese: Grana Padano can replace Parmesan for a similar salty, nutty finish.

  1. Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Trim the asparagus and cut into bite-size pieces. Cut the courgette into small dice and finely chop the shallots.
  2. Heat the olive oil and half the unsalted butter in a large pot over a medium heat. Add the shallots and cook for 4 to 5 minutes until soft but not coloured. Stir in the arborio rice and cook for 1 to 2 minutes until the grains look slightly translucent at the edges.
  3. Pour in the dry white wine and stir until it has almost completely evaporated. Add a ladleful of hot stock and stir gently until absorbed. Continue adding stock a ladle at a time, stirring often, for 15 to 18 minutes until the rice is tender with a slight bite and the risotto looks creamy.
  4. Stir in the asparagus and courgette and cook for 4 to 5 minutes until the asparagus is tender and the courgette is just cooked. Add the green peas and cook for 1 to 2 minutes until hot through. If the risotto looks tight, loosen with a splash more hot stock.
  5. Take the pot off the heat and stir in the remaining unsalted butter. Finely grate in the parmesan, then squeeze in the lemon juice to taste. Rest for 2 minutes, then serve while glossy and gently flowing.

Recipe notes

Tips

  • Keep the stock at a gentle simmer so the risotto stays at an even temperature and cooks more predictably.
  • Aim for a loose, creamy texture that slowly spreads on the plate; add a little extra hot stock at the end if needed.
  • For the brightest finish, add the lemon juice off the heat and taste as you go so it stays balanced with the parmesan.

Substitutions

  • Replace Dry White Wine with the same amount of Vegetable stock for an alcohol-free version.
  • Replace Parmesan with Grana padano cheese for a similar salty, nutty finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of Vegetable stock, stirring until piping hot and creamy again.
