Vegetable Korma
Why this recipe works
- Aromatic base: Cooking the onion, ginger, garlic and spices in ghee builds a rounded savoury foundation before the vegetables are added.
- Creamy sauce: Coconut milk, Greek yoghurt and ground almonds create a rich sauce with body, tang and a gentle nuttiness.
- Adaptable vegetables: The method works well with similar quick-cooking vegetables, making the korma easy to adjust to what is in season or already available.

Texture tips
- Keep the yoghurt smooth: Stir the yoghurt in off the heat, a spoonful at a time, then warm the curry very gently without letting it boil.
- Let the almonds thicken: Ground almonds continue to absorb liquid as the korma sits, so allow the sauce a brief rest before deciding whether it needs loosening.
- Add peas at the end: Stirring in the peas for the final minutes keeps them bright and tender rather than dull and soft.
Ingredient notes
- Cut vegetables evenly: Keep the potato, carrot and cauliflower in similar bite-size pieces so they cook through at roughly the same pace.
- Garam masala varies: Some blends are sweeter, warmer or more peppery than others, so taste the sauce before adding extra black pepper.
- Coconut milk affects richness: A fuller coconut milk gives a rounder, silkier sauce, while a lighter version will make the korma looser and less rich.
Make-ahead tips
- Prep the vegetables early: The onion, aromatics, carrot and cauliflower can be prepared ahead; cut the potato closer to cooking or keep it covered in cold water in the fridge.
- Reheat gently: Warm the korma over a low heat, stirring often, and add a splash of water if the sauce has thickened too much.
- Freezer-friendly: Freeze the cooled korma for up to 2 months, then defrost overnight in the fridge before reheating gently.
Serving ideas
- Serve with rice or bread: Basmati rice is the natural pairing, while naan or chapati works well for scooping up the creamy sauce.
- Add freshness: A little fresh coriander, extra yoghurt or toasted almonds can add contrast just before serving.
- Add a sharper side: Mango chutney or lime pickle brings sweetness and acidity to balance the mild, creamy curry.

Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear. Put it in a saucepan with the water and 1 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
- Meanwhile, finely slice the yellow onion. Peel and finely grate the ginger root, and finely grate or crush the garlic. Peel the Yukon Gold potato and carrots, then cut them into bite-size pieces; cut the cauliflower into small florets.
- Heat the ghee in a large pot over a medium heat. Add the onion with the remaining 1 tsp fine sea salt and cook for 8 to 10 minutes, stirring often, until soft and lightly golden. Stir in the ginger and garlic and cook for 1 minute until fragrant.
- Stir in the garam masala and ground turmeric and cook for 30 seconds. Add the potato and carrot and stir to coat in the spices. Pour in the coconut milk and bring to a gentle simmer.
- Add the cauliflower, cover, and simmer gently for 12 to 15 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened slightly. Stir in the green peas for the last 2 minutes to heat through. Keep the heat low so the sauce stays creamy.
- Take the pot off the heat and stir in the Greek yogurt a spoonful at a time until smooth. Stir in the ground almonds and black pepper, then return to a very low heat for 1 to 2 minutes until warmed through, without boiling. Serve the korma with the rice.
Recipe notes
Tips
- Keep the korma at a gentle simmer and avoid boiling after adding the Greek yogurt to prevent splitting.
- For a smoother sauce, stir the ground almonds into the coconut milk before adding it to the pot, so it disperses evenly.
- If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised Greek yogurt and ensure the curry is heated until piping hot.
Substitutions
- Replace ghee with olive oil for a lighter, dairy-free cooking fat.
- Replace Greek yogurt with coconut milk for a fully dairy-free korma, keeping the heat very low at the end.
- Replace cauliflower with broccoli for a similar texture and cooking time.
Storage
- Refrigerate up to 3 days
- Cool the korma quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over a low heat, stirring often, and do not let it boil; add a splash of water if it has thickened. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
