Vegetable Korma with Cashew Cream
Why this recipe works
- Creamy without dairy: Soaked cashews blend into a smooth cream that thickens the sauce and coats the vegetables gently.
- Fragrant spice base: Cardamom, cumin, coriander and garam masala are warmed in the onion mixture, building aroma before the vegetables simmer.
- Straightforward method: The vegetables cook directly in the spiced sauce, with the cashew cream added at the end for an easy, controlled finish.

Ingredient notes
- Blend the cashews thoroughly: Soaking softens the nuts, but blending until completely smooth is what gives the korma its silky sauce.
- Use whole cardamom for fragrance: Whole pods perfume the oil gently; remove them before serving if you prefer not to bite into them.
- Cut vegetables evenly: Small cauliflower florets and bite-size carrot pieces help everything become tender at the same time.
Texture tips
- Keep the simmer gentle: Once the cashew cream is added, avoid a hard boil so the sauce stays smooth rather than grainy.
- Pause and blend again: A second short blend after a brief pause can make the cashew cream noticeably smoother.
Make-ahead tips
- Good for meal prep: The curry keeps well in the fridge and the mild spice profile makes it easy to pair with rice or flatbreads through the week.
- Reheat gently: Warm in a saucepan with a little water, stirring often, until piping hot throughout.
- Freezer-friendly: Freeze after cooling completely, then defrost overnight in the fridge before reheating gently.
Serving ideas
- Serve with basmati rice: Fluffy basmati rice is ideal for soaking up the creamy cashew sauce.
- Add a fresh finish: A small handful of fresh coriander or a squeeze of lemon can brighten the mild, creamy sauce.

Ingredients
Instructions
- Put the cashew nuts in a bowl and cover with 300 ml of the water. Leave to soak for 10 minutes while you prep the vegetables.
- Thinly slice the yellow onion. Peel and finely grate the ginger root, and finely grate the garlic.
- Peel the carrot and cut into bite-size pieces. Cut the cauliflower into small florets so they cook evenly.
- Heat the rapeseed oil in a large pot over a medium heat. Add the cardamom pods and cook for 30 to 60 seconds until fragrant, then add the onion with a pinch of salt and cook for 8 to 10 minutes until soft and lightly golden.
- Stir in the ginger and garlic and cook for 1 minute. Add the ground cumin, ground coriander and half the garam masala, and cook for 30 seconds, stirring, until the spices smell toasted.
- Tip in the carrot and cauliflower and stir to coat in the spiced onion mixture. Add the remaining 200 ml water, bring to a gentle simmer, then cover and cook for 10 to 12 minutes until the vegetables are just tender.
- Blend the soaked cashew nuts with their soaking water until completely smooth. Stir the cashew cream into the pot and simmer gently for 3 to 5 minutes until the sauce looks silky and lightly thickened; do not let it boil hard.
- Stir in the green peas and cook for 2 to 3 minutes until hot through. Turn off the heat, stir in the remaining garam masala, and season with salt to taste; remove the cardamom pods before serving if you like.

Tips
- For the smoothest sauce, blend the cashew cream for a full minute, then blend again after a short pause to let the blender cool slightly.

Substitutions
- Replace rapeseed oil with olive oil for a fruitier finish.
- Replace cardamom pods with 0.5 tsp ground cardamom, stirred in with the other ground spices.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
