Air Fryer Kung Pao Chicken

Kung Pao chicken is a Chinese stir-fry recognised for its punchy sauce, dried chilli heat and roasted peanut crunch. This version keeps the familiar sweet-savoury-tangy profile but uses the air fryer to brown bite-sized chicken thigh pieces before they are coated in a glossy sauce of light soy, Chinese black vinegar, Shaoxing wine, brown sugar and doubanjiang chilli bean paste. The result is bold and aromatic without needing a wok, with spring onions adding freshness at the end. Served with jasmine rice, it makes a practical dinner with plenty of texture and a sauce that clings well to every piece.

Why this recipe works

  • Lightly crisp chicken: A cornflour coating helps the chicken brown in the air fryer before it is coated in sauce.
  • Balanced sauce: Soy, black vinegar, Shaoxing wine and brown sugar create the sweet, tangy and savoury balance associated with Kung Pao-style sauces.
  • Crunch and freshness: Roasted peanuts and spring onions are added at the end so they keep their bite against the glossy sauce.

Adjust the heat

  • For a milder sauce: Use less doubanjiang and fewer dried chilli pieces, then taste once the sauce has simmered before adding more.
  • For more heat: Increase the dried chilli or add a little chilli oil at the end for a sharper, more aromatic finish.
  • Keep the flavour balanced: If the sauce tastes very salty or hot, soften it with a little more sweetness or acidity rather than simply adding water.

Ingredient notes

  • Doubanjiang: This fermented chilli bean paste brings both heat and deep savoury flavour; brands vary in saltiness, so add it with restraint if yours is particularly strong.
  • Black vinegar: Chinese black vinegar gives the sauce a mellow, malty tang. Rice vinegar works as a substitute, but the result will taste lighter and sharper.
  • Roasted peanuts: Use fresh, crisp peanuts and fold them in at the end so they stay crunchy rather than softening in the sauce.

Common mistakes

  • Overfilling the air fryer: Keep the chicken in a single layer where possible. Crowding traps steam and prevents the coating from browning properly.
  • Letting the sauce catch: The sugar and chilli bean paste can stick if the heat is too high, so simmer gently and whisk as the cornflour thickens.
  • Saucing too early: Let the chicken stand briefly after air-frying so surface steam can escape before it goes into the sauce.

Make-ahead tips

  • Store rice separately: Keep the rice apart from the chicken and sauce so it reheats evenly and does not absorb too much moisture.
  • Reheat gently: Warm the chicken and sauce in a saucepan with a splash of water until piping hot; the sauce will loosen as it heats.
  • Best texture on the day: Leftovers keep well in the fridge, but the peanuts will soften, so the dish has the best contrast when served immediately.

  1. Rinse the jasmine rice until the water runs mostly clear, then put it in a saucepan with the water. Bring to the boil, cover, then cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  2. Cut the chicken into bite-sized pieces and toss with half the cornflour in a bowl. Heat the air fryer to 200°C (390°F), then air-fry the chicken for 10 to 12 minutes, shaking halfway, until browned and cooked through. Cook in batches if needed to keep the pieces in a single layer.
  3. Meanwhile, whisk the light soy sauce, Chinese black vinegar, Shaoxing Cooking Wine and brown sugar in a saucepan. In a small bowl, whisk the remaining cornflour with 2 tbsp water to make a smooth slurry. Finely chop the ginger, crush the garlic, and slice the spring onions; break the dried red chili into pieces.
  4. Set the saucepan over medium heat and stir in the doubanjiang chili bean paste, ginger, garlic and dried red chili. Bring to a gentle simmer, then whisk in the cornflour slurry and cook for 1 to 2 minutes until thick and glossy. Keep the heat moderate so the sauce does not catch.
  5. Add the air-fried chicken to the sauce and toss until evenly coated. Fold in the roasted peanuts and spring onions and cook for 1 minute to warm through. Serve immediately with the jasmine rice.

Recipe notes

Tips

  • If your doubanjiang is very salty, start with a slightly smaller amount and add more once the sauce has simmered.
  • For better texture, let the air-fried chicken sit for 2 minutes before saucing so excess surface steam can escape.

Substitutions

  • Replace Chinese black vinegar with rice vinegar for a lighter, sharper acidity.
  • Replace Shaoxing Cooking Wine with dry sherry for a similar aroma and sweetness.

Storage

  • Refrigerate up to 3 days
  • Cool and refrigerate in an airtight container. Reheat gently in a saucepan with a splash of water until piping hot; the sauce will loosen as it warms and the peanuts will soften. Store rice separately and reheat with a tablespoon of water, covered, until steaming.
