Air Fryer Pad Thai Bites
Why this recipe works
- Crisp outside, tender filling: Rice paper turns delicate and crisp in the air fryer while the noodle and prawn filling stays soft inside.
- Classic Pad Thai balance: Tamarind and lime bring sharpness, palm sugar adds sweetness, and fish sauce and soy provide savoury depth.
- Built for sharing: The bite-sized format makes the flavours easy to serve as a snack, starter or party appetiser.

Texture tips
- Keep the filling dry: Drain the noodles thoroughly and let the prawn mixture cool before wrapping so steam does not soften the rice paper.
- Give the bites space: Arrange them in a single layer with room between each one so hot air can circulate and crisp the wrappers evenly.
Common mistakes
- Overfilling the air fryer: Packing the basket too tightly traps moisture and prevents the rice paper from turning crisp.
- Undercooking the prawns: Cook the prawns until pink and opaque before wrapping, then reheat the bites until hot throughout.
- Soaking rice paper too long: Dip each sheet only until flexible; over-softened wrappers are harder to roll and more likely to tear.
Ingredient notes
- Tamarind paste: Tamarind gives the filling its distinctive sour edge, so use a paste with a clean, tangy flavour rather than a heavily sweetened sauce.
- Raw prawns: Raw peeled prawns work well because they cook quickly and absorb the tamarind, fish sauce and palm sugar glaze.
- Rice noodles: Cutting the softened noodles into shorter lengths makes the filling easier to portion and helps the bites roll neatly.
Serving ideas
- Serve with the peanut-lime dip: The sharp lime, salty soy and crushed peanuts echo Pad Thai flavours and add crunch at the table.
- Finish with spring onion: A little reserved spring onion adds freshness and colour just before serving.

Ingredients
Instructions
- Soak the rice noodles in just-boiled water for 6 to 8 minutes until pliable, then drain well and cool. Cut the noodles into shorter lengths with kitchen scissors so they are easier to wrap.
- Heat the vegetable oil in a large frying pan over medium heat and cook the garlic for 30 seconds until fragrant. Add the prawns and cook for 2 to 3 minutes, stirring, until just pink.
- Stir in the tamarind paste, fish sauce and palm sugar and cook for 1 minute until the sugar dissolves and the prawns are glazed. Tip into a mixing bowl and cool for 5 minutes, then fold in the noodles, bean sprouts and most of the spring onion (reserve a little for the dip if you like).
- Fill a wide bowl with warm water and dip in one rice paper wrap for 10 to 15 seconds until flexible. Lay it flat, add a small mound of filling, then fold in the sides and roll up tightly; repeat with the remaining wraps.
- Preheat the air fryer to 200°C (390°F). Arrange the bites in a single layer and air fry for 8 to 10 minutes, turning halfway, until crisp and lightly golden.
- For the dip, squeeze the lime juice into a small bowl and stir in the soy sauce. Crush the roasted peanuts and stir most into the dip, then sprinkle the rest over the bites with the reserved spring onion before serving.
Recipe notes
Tips
- Keep the filling fairly dry: drain the noodles well and let the prawn mixture cool before wrapping to help the rice paper crisp in the air fryer.
- Cook in batches rather than overcrowding the basket; good airflow is what makes the wrappers crisp.
- If serving to anyone pregnant, elderly, or immunocompromised, make sure the prawns are cooked until fully opaque and piping hot throughout.
Substitutions
- Replace Rice noodles with rice vermicelli for a finer, lighter filling.
- Replace Soy sauce in the dip with Fish sauce for a punchier, saltier dip.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until hot and crisp.
