Italian Chicken Traybake with Peppers and Cherry Tomatoes
Why this recipe works
- One-tray efficiency: Chicken, vegetables and pan sauce cook together on the same tray, keeping the method simple and the flavours connected.
- Bright but savoury: Balsamic vinegar cuts through the richness of the chicken skin and mingles with the tomato juices to form a glossy, tangy sauce.
- Golden chicken skin: Roasting the thighs skin-side up helps the skin colour while the meat stays protected and juicy underneath.
- Herby roasted depth: Oregano, garlic, peppers and onions roast into the tray juices, giving the dish a fuller flavour than a plain baked chicken dinner.

Timing notes
- Rest before serving: A short rest helps the chicken juices settle and gives the tomato-balsamic pan sauce a glossier texture.
- Best served hot: Serve soon after roasting, while the chicken skin is still crisp and the vegetables are soft but not collapsed.
Ingredient notes
- Use skin-on thighs: Bone-in, skin-on thighs are well suited to high-heat roasting because they stay juicy while the skin browns.
- Adjust the vinegar: Balsamic gives a rounded sweetness; red wine vinegar makes the pan sauce sharper and lighter.
- Add basil at the end: Fresh basil is best torn over the finished tray so it stays fragrant rather than darkening in the oven.
Serving ideas
- Serve with something to catch the juices: Crusty bread, roast potatoes, rice or soft polenta all work well with the tomato-balsamic pan sauce.
- Add a fresh side: A simple green salad or lightly dressed rocket balances the richness of the roasted chicken.
Make-ahead tips
- Good for leftovers: Cool cooked leftovers completely, then refrigerate in a sealed container for up to 3 days.
- Reheat thoroughly: Reheat on a baking tray at 180°C (355°F) until piping hot, adding a little extra time if the pieces are large.
- Freezer-friendly: Freeze cooked portions for up to 2 months, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). In a large bowl, whisk together the olive oil, dried oregano, fine sea salt, black pepper and balsamic vinegar.
- Peel and thinly slice the red onion into wedges. Cut the red peppers into chunky strips and lightly crush the garlic cloves.
- Add the onion, peppers and cherry tomatoes to the bowl and toss to coat. Tip onto a large baking tray and spread out so the vegetables are in a single layer.
- Nestle the chicken thighs among the vegetables, skin-side up, and spoon a little of the oily balsamic mixture over the top. Roast for 35 minutes, turning the tray once, until the chicken is golden and the tomatoes have burst.
- Check the chicken is cooked through and the juices run clear, then rest for 5 minutes so the pan juices settle into a glossy sauce. Tear over the fresh basil and finish with a final drizzle of olive oil from the tray before serving.
Recipe notes
Tips
- For the best colour, keep the chicken skin facing up and avoid crowding the tray so the vegetables roast rather than steam.
- If the pan juices look thin, spoon the chicken and vegetables onto a platter and return the tray to the oven for 3 to 5 minutes to reduce slightly.
- If serving vulnerable groups, make sure the chicken is fully cooked through and piping hot before eating.
Substitutions
- Replace balsamic vinegar with red wine vinegar for a sharper, lighter pan sauce.
- Replace dried oregano with fresh basil, stirring most through at the end and reserving a little to scatter on top.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 180°C (355°F) for 15 to 20 minutes until piping hot, or freeze for up to 2 months and defrost overnight in the fridge before reheating.
