Tacos de Asada (Grilled Steak Tacos)
Why this recipe works
- Bold grilled flavour: Skirt steak takes well to a short lime, garlic and cumin marinade, then develops deep savoury char over high heat.
- Tender meat, fresh toppings: Thinly sliced steak stays easy to bite through, while onion, coriander and tomato salsa add freshness and crunch.
- Fast enough for weeknights: The salsa and toppings are prepared while the steak marinates, keeping the whole dish streamlined.

Adjust the heat
- For a milder salsa: Remove the jalapeño seeds and membrane before chopping, or use less chilli in the tomato salsa.
- For more heat: Keep the jalapeño seeds in the salsa or add extra fresh chilli at the table.
- Keep it balanced: Taste the salsa before serving; a little extra lime or salt can sharpen the tomato and soften the chilli’s edge.
Timing notes
- Short marinating time: A brief room-temperature marinade is enough to season the thin steak without slowing the recipe down.
- Rest before slicing: Let the steak rest before cutting so the juices settle and the slices stay tender.
- Serve while hot: Warm the tortillas just before filling so they stay pliable and hold the steak well.
Texture tips
- Slice against the grain: Cutting across the muscle fibres is the key step for making skirt steak tender in tacos.
- Keep tortillas from turning soggy: Fill the tortillas just before serving rather than letting the salsa sit on them for too long.
Ingredient notes
- Best cut for the job: Skirt steak is well suited to fast grilling because it has a loose grain, strong beefy flavour and good surface area for charring.
- Using flank steak: Flank steak works as an alternative, but it should still be sliced thinly against the grain for the best texture.
- Use ripe tomato: A ripe tomato gives the salsa better sweetness and juiciness, balancing the lime and chilli.

Ingredients
Instructions
- Juice the limes into a bowl. Finely grate or crush the garlic, then mix it with the lime juice, ground cumin, fine sea salt, black pepper and olive oil.
- Add the skirt steak and turn to coat well. Leave to marinate while you prepare the salsa and toppings, about 10 minutes at room temperature.
- Dice the tomato and finely chop the jalapeno pepper. Finely chop half the white onion and a small handful of the fresh coriander, then mix them together for a simple salsa; season with a pinch of fine sea salt if needed.
- Finely chop the remaining white onion and the remaining fresh coriander for serving. Set aside so you can build the tacos quickly while the steak is hot.
- Heat a barbecue grill or grill to high. Grill the steak for 3 to 5 minutes per side, depending on thickness, until nicely charred and cooked to your liking.
- Transfer the steak to a board and rest for 5 minutes. Slice thinly against the grain for tender pieces.
- Warm the corn tortillas on the grill for 20 to 30 seconds per side until pliable and lightly toasted. Fill each tortilla with sliced steak, then top with the chopped onion, coriander and tomato salsa.
Recipe notes
Tips
- Slice the steak against the grain and as thinly as you can; it makes skirt steak noticeably more tender in tacos.
- For a milder salsa, remove the seeds from the jalapeno pepper before chopping.
- If serving anyone vulnerable, cook the steak to at least medium and ensure it is piping hot throughout.
Substitutions
- Replace Beef skirt steak with Beef flank steak, grilling it the same way and slicing thinly against the grain.
- Replace Jalapeno pepper with Green chili pepper for a similar heat and flavour.
- Replace Olive oil with Avocado oil for a higher-heat option on the grill.
Storage
- Refrigerate up to 3 days
- Store leftover steak and salsa separately in the fridge. Reheat the steak in a hot frying pan with a splash of water until piping hot, and warm the corn tortillas briefly before serving.
