Lanzhou Beef Noodles (Hand-Pulled Noodle Soup)

Lanzhou beef noodles, often recognised by their clear broth and hand-pulled lamian-style wheat noodles, are one of China’s most distinctive beef noodle soups. The bowl is defined by clarity rather than heaviness: marrow bones and brisket give the soup body, while ginger, garlic, star anise, cassia and peppercorns add a clean aromatic depth. Thin slices of tender beef sit over springy noodles, finished with chilli oil, spring onion and coriander for heat and freshness. Best served immediately, it is a satisfying project recipe where the quality of the broth and the elasticity of the noodles matter just as much as the final seasoning.

Why this recipe works

  • Clear, clean broth: Blanching the bones first and keeping the stock at a bare simmer helps the broth stay clear rather than cloudy.
  • Springy noodles, tender beef: Freshly pulled noodles give the soup its characteristic bounce, while the brisket is simmered until tender but still sliceable.
  • Aromatic but balanced: Ginger, garlic, star anise, cassia and peppercorns season the broth without overpowering its clean beef flavour.

Timing notes

  • Rest the dough properly: The resting stages make the dough more elastic and easier to pull into long, even noodles.
  • Serve straight away: Fresh hand-pulled noodles are at their best immediately after cooking, while they are still springy and separate.

Common mistakes

  • Do not boil the broth hard: A rolling boil can make the broth cloudy and heavy-tasting; keep it at a gentle simmer after the initial blanching step.
  • Do not overcook the noodles: Fresh pulled noodles cook quickly, so drain them as soon as they are bouncy and just cooked through.

Adjust the heat

  • For a milder bowl: Use less chilli oil when finishing the soup and let diners add more at the table.
  • For more heat: Add extra chilli oil just before serving so the spice stays vivid against the clean beef broth.

Make-ahead tips

  • Make the broth ahead: The broth and beef can be cooked in advance, chilled quickly and reheated until piping hot before serving.
  • Keep noodles separate: Store broth and beef separately from the noodles where possible; fresh noodles give the best final texture.

Instructions

  1. Put the marrow bones in a stockpot, cover with cold water, and bring to the boil. Boil for 10 minutes, then drain and rinse the bones and pot to remove any scum. This blanching keeps the broth clear.
  2. Return the bones to the clean pot and add the brisket. Cover with fresh cold water and bring to a gentle simmer, skimming any foam for the first 10 minutes. Keep it at a bare simmer so the broth stays clear.
  3. Slice the ginger and lightly crush the garlic cloves, then add both to the pot with the star anise, cassia cinnamon and peppercorns. Simmer gently for 1 hour 15 minutes, or until the brisket is tender but still sliceable. Top up with hot water if needed to keep the meat submerged.
  4. Lift out the brisket and set it aside to cool slightly. Strain the broth into a clean pot, discarding the aromatics, then season the broth with the light soy sauce and fine sea salt. Keep the broth hot on a very low heat while you make the noodles.
  5. In a mixing bowl, combine the plain flour with the fine sea salt, then add 180 ml water a little at a time, mixing to form a shaggy dough. Knead for 8 to 10 minutes until smooth and elastic, then cover and rest for 30 minutes. The rest makes the dough easier to pull.
  6. Divide the dough into 6 pieces and roll each into a rope, then cover and rest for 10 minutes. Working with one rope at a time, pull and slap it on the worktop, stretching into long noodles; fold and pull again until you reach your preferred thickness. Keep the formed noodles covered while you pull the rest.
  7. Bring a large pot of water to the boil. Cook the noodles in batches for 1 to 2 minutes, until bouncy and just cooked through, then drain well. Divide the noodles between 3 bowls.
  8. Thinly slice the brisket, then slice the spring onion and roughly chop the coriander. Arrange the beef over the noodles, ladle over the hot broth, and finish each bowl with chilli oil, spring onion and coriander. Serve immediately while the noodles are springy.

Recipe notes

Tips

  • Keep the broth at a gentle simmer, not a rolling boil, to maintain a clear, clean-tasting soup.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, ensure the beef is cooked until fully tender and the broth is piping hot when served.

Substitutions

  • Replace Beef brisket with Beef shank for a similarly gelatinous, tender result.
  • Replace Chili oil with a smaller amount of Chili oil for a milder bowl, and add more at the table to taste.
  • Replace Fresh coriander with extra Spring onion if you prefer a less herbal finish.

Storage

  • Refrigerate up to 3 days
  • Store the broth and beef together in an airtight container; cool quickly before chilling. Freeze the broth and beef for up to 2 months. Make the noodles fresh; if you must store cooked noodles, rinse, drain well, and refrigerate for up to 1 day, then reheat briefly in boiling water before serving.
