Pan de Jamón (Venezuelan Ham Bread with Olives and Raisins)
Why this recipe works
- Sweet-savoury balance: Salty ham, briny olives and sweet raisins create the contrast that makes pan de jamón so recognisable.
- Classic rolled structure: Rolling the filling inside the dough gives every slice a defined spiral and an even distribution of ham, olives and raisins.
- Flexible serving: The loaf can be served warm or at room temperature, making it practical for festive meals and shared tables.

Authenticity notes
- Venezuelan holiday bread: Pan de jamón is closely associated with Venezuelan festive meals, where it is served sliced as a savoury-sweet bread alongside a larger spread.
- Signature filling: The combination of ham, green olives and raisins is central to the dish, giving the loaf its distinctive salty, briny and sweet profile.
Timing notes
- Let the dough guide you: Rising times can vary with room temperature, so look for the dough to double first, then become slightly puffy after shaping.
- Rest before slicing: A short rest helps the crumb settle; for neater slices, let the loaf cool a little longer before cutting.
- Serve warm or room temperature: The bread holds well after baking, which makes it useful for entertaining or serving as part of a festive meal.
Ingredient notes
- Use thinly sliced ham: Thin slices roll more neatly into the dough and give an even layer through the finished loaf.
- Drain the olives well: Removing excess brine helps prevent wet patches in the dough while keeping the savoury olive flavour.
- Keep the raisins balanced: Raisins should add pockets of sweetness rather than dominate the loaf; sultanas can be used for a slightly juicier result.
Make-ahead tips
- Bake ahead: The loaf can be baked earlier in the day, cooled completely and wrapped until ready to serve.
- Reheat gently: Warm slices in a 180°C (355°F) oven until heated through, which refreshes the crumb without drying the bread excessively.
- Freeze sliced: Freeze fully cooled slices well wrapped, then defrost at room temperature before reheating.

Ingredients
Instructions
- Warm the milk in a saucepan until just lukewarm, then pour into a mixing bowl and whisk in the caster sugar and yeast. Leave for 5 minutes until lightly foamy.
- Add the flour and salt, then add the egg and mix to a shaggy dough. Knead for 8 to 10 minutes until smooth and elastic.
- Knead in the butter a little at a time until fully incorporated and the dough is glossy and supple. Shape into a ball, cover the bowl, and leave to rise until doubled in size.
- Tip the dough onto a lightly floured surface and roll into a rectangle about 35 x 45 cm, with a long side facing you. Arrange the ham over the dough, leaving a 2 cm border at the top edge, then scatter over the olives and raisins.
- Roll up tightly from the long edge into a log, pinching the seam to seal and tucking the ends under. Transfer seam-side down to a baking tray and leave to prove until slightly puffy.
- Heat the oven to 190°C (375°F). Bake for 30 to 35 minutes until deep golden and the loaf sounds hollow when tapped underneath.
- Cool on the tray for 10 minutes, then slice thickly to serve warm or at room temperature. For neat slices, let it cool a little longer before cutting.
Recipe notes
Tips
- If the dough feels sticky while kneading, dust the work surface lightly with flour, but keep additions minimal so the loaf stays soft.
- For a glossy finish, brush the loaf with a little milk during the last 10 minutes of baking.
- If serving to anyone vulnerable, make sure the loaf is baked through and piping hot in the centre before cooling.
Substitutions
- Replace Whole milk with Lactose-free milk for a similar richness.
- Replace Cured ham with Smoked ham for a deeper, smokier flavour.
- Replace Raisin with Sultana for a slightly juicier sweetness.
Storage
- Refrigerate up to 3 days
- Cool completely, then wrap well and refrigerate for up to 3 days. Reheat slices in a 180°C (355°F) oven for 8 to 10 minutes until warmed through. Freeze sliced for up to 2 months; defrost at room temperature, then reheat as above.
