Home-Style Baklava (Filo Pastry with Nuts and Honey Syrup)
Why this recipe works
- Crisp, defined layers: Butter between the filo sheets helps the pastry separate and crisp as it bakes.
- Layered nut filling: Pistachios, walnuts and cinnamon give the filling a coarse texture and warm, rounded flavour.
- Balanced syrup: Lemon brightens the honey syrup, keeping the sweetness rich rather than flat.
- Better after setting: The pastry needs time to absorb the syrup and firm up, making it well suited to preparing ahead.

Timing notes
- Layering takes the attention: Most of the hands-on work is in buttering and stacking the filo; the syrup can be made while the tray bakes.
- Let it set properly: After adding the syrup, leave the baklava at room temperature for at least 45 minutes, then cool fully before lifting out the pieces.
- Cut cleanly after cooling: The diamonds hold their shape best once the syrup has settled into the layers and the pastry has firmed.
Texture tips
- Syrup slowly and evenly: Pour the warm syrup gradually over the hot pastry, aiming into the cuts so it soaks through without flooding the top.
- Cut before baking: Slicing all the way to the base before baking helps the pieces separate cleanly and lets butter and syrup reach the layers.
- Keep filo pliable: Cover unused filo with a barely damp cloth while assembling, as dry sheets crack and form uneven layers.
Ingredient notes
- Use a coarse nut mix: Crushing the pistachios and walnuts into rough pieces gives the filling texture and prevents it becoming paste-like.
- Honey changes the finish: Honey gives the syrup a floral richness; using more sugar instead creates a cleaner, less aromatic sweetness.
- Lemon keeps it bright: The lemon juice balances the syrup, so reduce it only if you prefer a softer citrus note.
Make-ahead tips
- Good for making ahead: Baklava keeps well once fully cooled, and the flavour and texture settle as the syrup absorbs.
- Freeze in portions: Wrap cooled pieces well and freeze for later; thaw at room temperature before serving.
- Refresh if needed: To re-crisp thawed pieces, warm them briefly in a 160°C (320°F) oven until the pastry feels light again.

Instructions
- Heat the oven to 170°C (340°F). Put the pistachios and walnuts in a mixing bowl and crush them to a coarse rubble with a knife, then stir in the ground cinnamon.
- Melt the unsalted butter in a saucepan over low heat, then take it off the heat. Skim off any foam if you like, and keep the butter warm so it stays fluid.
- Brush a baking tray generously with some of the melted butter. Lay in a sheet of phyllo dough, brush lightly with butter, and repeat to build a base of about 10 layers, keeping the remaining phyllo covered so it does not dry out.
- Scatter over a third of the nut mixture in an even layer. Add 5 more buttered layers of phyllo, then repeat the nuts and phyllo twice more, finishing with about 10 buttered layers on top.
- Using a sharp knife, cut the baklava into diamonds, cutting all the way through to the base. Drizzle any remaining butter over the top, letting it run into the cuts.
- Bake for 60 to 70 minutes until deeply golden and crisp, rotating the tray halfway through for even colouring. If it is browning too quickly, lower the oven to 160°C (320°F) for the final 15 minutes.
- While the baklava bakes, make the syrup: put the water and caster sugar in a saucepan and bring to a gentle simmer, stirring until dissolved. Add the honey, then squeeze in the lemon juice and simmer for 8 to 10 minutes until slightly thickened.
- As soon as the baklava comes out of the oven, slowly pour the warm syrup evenly over the hot pastry, aiming for the cuts. Leave at room temperature for at least 45 minutes, then cool fully until the layers set before lifting out the diamonds.

Tips
- Keep the phyllo dough covered with a barely damp cloth while you work so it stays pliable and does not crack.
- Pour warm syrup over hot baklava for the best soak without turning the pastry soggy.
- If serving to vulnerable groups, use pasteurised honey or avoid honey, as it is not recommended for infants under 12 months.
Substitutions
- Replace Pistachios with Walnuts for an all-walnut filling.
- Replace Honey with Caster sugar (use 350 g total caster sugar in the syrup) for a cleaner, less floral sweetness.
- Replace Lemon with a smaller amount of Lemon (use half) for a milder citrus note.
Storage
- Refrigerate up to 5 days
- Store in an airtight container at cool room temperature for the crispest layers, or in the fridge if your kitchen is warm. To freeze, wrap pieces well and freeze for up to 2 months; thaw at room temperature and refresh in a 160°C (320°F) oven for 5 to 8 minutes to re-crisp.
