Kousa Mahshi (Stuffed Courgettes with Lamb and Rice)
Why this recipe works
- Classic stuffed-vegetable method: Coring the courgettes and simmering them gently lets the vegetable soften while keeping the filling neatly contained.
- Warm, savoury filling: Lamb, rice, onion, garlic, cumin and cinnamon create a fragrant filling that seasons the courgettes from within as it cooks.
- Generous and saucy: The tomato and garlic sauce keeps the dish moist and gives every portion a rich, spoonable finish.

Authenticity notes
- Home-style preparation: Kousa mahshi is typically cooked gently in a pot rather than baked, allowing the courgettes, rice and sauce to cook together.
- Serve from the pot: Arrange the courgettes with plenty of tomato sauce and serve warm, letting diners spoon extra sauce over their portions.
Texture tips
- Keep the simmer gentle: A low, steady simmer helps the courgettes become tender without splitting or releasing the filling into the sauce.
- Do not overpack the filling: Leave space at the top of each courgette so the rice can expand as it cooks.
Ingredient notes
- Choose straight courgettes: Medium, firm courgettes that are fairly straight are easier to hollow and cook more evenly in the pot.
- Short-grain rice gives body: Short-grain rice creates a slightly plumper, more cohesive filling than longer-grain varieties.
Make-ahead tips
- Cook ahead: The finished dish can be cooled and refrigerated with plenty of sauce, then reheated gently until piping hot.
- Reheat with moisture: Warm in a covered pot over low heat with a splash of water, or covered in a 180°C (355°F) oven until hot throughout.

Instructions
- Trim the ends from the courgettes. Using a paring knife, carefully hollow out the centre of each courgette, leaving a sturdy wall so they hold their shape. Rinse the hollowed courgettes and set aside.
- Rinse the rice under cold water until the water runs mostly clear, then drain well. Finely chop the onion and crush 4 of the garlic cloves.
- In a mixing bowl, combine the minced lamb, drained rice, onion, crushed garlic, ground cumin, ground cinnamon, 1 tsp of the fine sea salt, and the black pepper. Mix with a wooden spoon or your hands until evenly combined.
- Stuff each courgette with the lamb and rice mixture, stopping about 1 cm from the top to allow the rice to expand. Pack the filling gently rather than tightly. Arrange the stuffed courgettes snugly in a large pot in a single layer if possible.
- Crush the remaining 2 garlic cloves. In a jug or bowl, stir together the tomato passata, water, remaining 1 tsp fine sea salt, and the crushed garlic.
- Pour the tomato sauce over the courgettes; they should be mostly submerged, so add a little more water if needed. Drizzle over the extra virgin olive oil. Bring to a gentle simmer over medium heat.
- Cover and simmer on low for 55 to 60 minutes, turning the courgettes once halfway through, until the courgettes are tender and the rice is cooked. The sauce should be slightly thickened and the filling should be cooked through. If the sauce reduces too quickly, add a splash of water and keep the heat low.
- Rest off the heat for 5 minutes so the filling settles. Serve warm, spooning plenty of tomato and garlic sauce over each portion.
Recipe notes
Tips
- Choose medium courgettes that are straight and similar in size so they cook evenly and sit neatly in the pot.
- Keep the simmer very gentle; a hard boil can split the courgettes and make the filling spill into the sauce.
- If serving vulnerable groups, ensure the lamb is fully cooked through and the rice is tender with no hard centre before serving.
Substitutions
- Replace minced lamb with minced beef for a milder flavour and slightly leaner finish.
- Replace short-grain rice with basmati rice for a lighter texture, but leave a little more headspace when stuffing as it expands differently.
- Replace ground cinnamon with allspice for a warmer, peppery spice note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with plenty of sauce. Reheat gently in a covered pot over low heat with a splash of water until piping hot, or in a 180°C (355°F) oven, covered, until hot throughout.
