Spaghetti alla Nerano (Courgette and Cheese Pasta)
Why this recipe works
- Courgette-led flavour: Browning the courgettes in olive oil concentrates their sweetness and leaves a savoury base for the pasta.
- Creamy without cream: Starchy pasta water and finely grated cheese emulsify into a smooth coating when tossed off the heat.
- Simple Italian technique: The dish depends on careful frying, pasta water and timing rather than a long ingredient list.

Authenticity notes
- Campanian style: Spaghetti alla Nerano is associated with the Amalfi Coast and is known for pairing fried courgettes with a smooth cheese finish.
- About the cheese: Provolone gives the sauce its savoury depth and gentle stretch; Parmesan adds saltiness and structure.
Ingredient notes
- Choose firm courgettes: Firm, glossy courgettes fry more cleanly and hold their shape better than soft or watery ones.
- Slice evenly: Thin, even rounds brown at a similar pace, which helps avoid a mix of pale slices and overcooked edges.
Common mistakes
- Adding cheese over direct heat: Take the pan off the heat before adding the cheeses; high heat can make the sauce tighten or turn grainy.
- Browning the garlic: Cook the garlic only until fragrant. If it darkens, it can turn bitter and dominate the courgettes.
- Stewing the courgettes: Fry in batches so the slices brown rather than steam, giving the finished pasta deeper flavour.
Make-ahead tips
- Prep before cooking: Slice the courgettes, grate the cheeses and tear the basil before starting, as the final tossing stage moves quickly.
- Best served straight away: The cheese coating is at its silkiest just after tossing, so serve as soon as the pasta is glossy.
- Reheat gently: Warm leftovers in a frying pan with a splash of water, tossing gently until piping hot and glossy again.

Instructions
- Slice the courgettes into thin rounds, about 3 mm thick. Thinly slice the garlic. Grate the provolone and parmesan, and tear the basil leaves.
- Heat the olive oil in a large frying pan over medium-high heat. Fry the courgettes in batches, seasoning lightly with a pinch of the salt as you go, until deeply golden on both sides. Transfer the browned courgettes to a bowl, leaving the oil in the pan.
- Bring a large pot of water to the boil and salt it with the remaining salt. Cook the spaghetti until just shy of al dente. Reserve 250 ml of the pasta water, then drain.
- Return the frying pan to medium heat and add the garlic to the courgette oil; cook for 30 to 60 seconds until fragrant, without letting it brown. Add the courgettes back to the pan and toss to coat. Add the drained spaghetti and 150 ml of the reserved pasta water, tossing vigorously until glossy.
- Take the pan off the heat and add the provolone and parmesan, tossing constantly until melted and silky; add a splash more pasta water as needed to loosen. Season with black pepper and fold through most of the basil. Serve straight away with the remaining basil on top.
Recipe notes
Tips
- Brown the courgettes properly: you want deep golden edges for flavour, not pale and stewed slices.
- For the silkiest sauce, melt the cheeses off the heat and keep tossing; if it tightens, loosen with a little more hot pasta water.
- If serving anyone who should avoid undercooked foods, use cheeses made with pasteurised milk.
Substitutions
- Replace Provolone cheese with mozzarella for a milder, stretchier sauce.
- Replace Fresh basil with Fresh parsley for a more peppery, herb-forward finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a frying pan with a splash of water, tossing until piping hot and glossy again; avoid high heat, which can make the cheese go grainy.
