Risotto alla Zucca (Italian Pumpkin Risotto)

Pumpkin risotto brings together the slow-cooked creaminess of Italian risotto with the mellow sweetness of autumn squash. Arborio rice is stirred with hot vegetable stock until the grains turn tender yet retain a slight bite, while roasted pumpkin adds depth, colour and a silky texture when folded through. Parmesan gives the dish savoury weight, and fresh sage cuts through the richness with a fragrant, earthy note. Serve it loose and flowing, as a comforting vegetarian dinner or a refined first course.

Why this recipe works

  • Roasted depth: Roasting the pumpkin first concentrates its sweetness and adds light caramelisation before it is folded into the rice.
  • Naturally creamy: Arborio rice releases starch as stock is added gradually, creating a loose, creamy risotto without needing cream.
  • Sweet-savoury balance: Parmesan, butter, black pepper, and sage keep the pumpkin’s sweetness grounded and savoury.

Timing notes

  • Use the roasting time well: While the pumpkin roasts, keep the stock hot, chop the onion, and grate the parmesan so the risotto can be cooked without pauses.
  • Serve promptly: Risotto tightens as it sits, so aim to serve it as soon as it reaches a loose, flowing texture.
  • Rest briefly off the heat: A short covered rest lets the parmesan melt through the rice while keeping the texture soft and cohesive.

Texture tips

  • Crush some pumpkin: Gently mash a few pieces into the rice to enrich the risotto while leaving some chunks for contrast.
  • Keep it loose: If the risotto thickens before serving, loosen it with a little hot stock and stir until it flows slowly on the plate.
  • Stop at al dente: Remove the pot from the heat while the rice still has a slight bite; it will continue to soften during the final rest.

Ingredient notes

  • Choose a firm, sweet pumpkin: Dense pumpkin or winter squash works best because it roasts cleanly and brings sweetness without turning watery.
  • Use risotto rice: Arborio is important here because its starch helps create the creamy texture that defines the dish.
  • Sage keeps it savoury: Fresh sage cuts through the richness and pairs naturally with pumpkin; thyme gives a softer herbal alternative.

Make-ahead tips

  • Prepare components ahead: The pumpkin can be roasted and the parmesan grated in advance, but cook the risotto itself close to serving.
  • Best freshly cooked: Risotto has the best texture straight from the pot, when the rice is creamy, loose, and still al dente.
  • Reheat gently: Warm leftovers in a saucepan with a splash of vegetable stock, stirring until creamy and piping hot.

  1. Heat the oven to 220°C (430°F). Cut the pumpkin into 2 cm chunks, then toss on a baking tray with the olive oil, 0.5 tsp of the fine sea salt and a pinch of the black pepper. Roast for 20 to 25 minutes until tender and lightly caramelised.
  2. Meanwhile, pour the vegetable stock into a saucepan and keep it at a gentle simmer. Finely chop the yellow onion. Grate the parmesan and set it aside.
  3. Melt the butter in a large pot over a medium heat, then add the onion with the remaining fine sea salt and cook for 8 to 10 minutes until soft but not coloured. Add the fresh sage leaves and cook for 30 seconds until fragrant. Stir in the arborio rice and toast for 2 minutes until the grains look slightly translucent at the edges.
  4. Add a ladle of hot stock and stir until it is mostly absorbed. Continue adding stock a ladle at a time, stirring often, for 16 to 18 minutes until the rice is al dente and the risotto is creamy and loose. You may not need every last drop of stock, or you may need a splash more depending on your pan and rice.
  5. Stir in the roast pumpkin, gently crushing a few pieces to enrich the texture. Take the pot off the heat and stir in the parmesan and the remaining black pepper. Cover and rest for 2 minutes, then taste and adjust with a little more fine sea salt if needed before serving.

Recipe notes

Tips

  • Keep the stock hot throughout; adding cold stock slows cooking and can make the risotto gluey.
  • Aim for a flowing texture that slowly spreads on the plate; loosen with a splash of hot stock right before serving if it tightens up.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use parmesan made with pasteurised milk.

Substitutions

  • Replace Fresh sage with fresh thyme for a softer, more herby finish.
  • Replace Parmesan with grana-padano-cheese for a slightly milder, sweeter flavour.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of vegetable stock, stirring until piping hot and creamy again.
