Tamales de Rajas con Queso (Poblano and Cheese Tamales)
Why this recipe works
- Layered savoury filling: Roasted poblanos bring sweetness and smoke, while pickled jalapeños, garlic, onion and oregano add brightness and depth.
- Classic tamal structure: Spreading masa on soaked corn husks and steaming it upright helps the dough set into a soft, fluffy wrapper around the filling.
- Good for batch cooking: Tamales reheat well by steaming, making them practical to prepare ahead, refrigerate or freeze for later meals.

Timing notes
- Allow time for assembly: The active work is mostly soaking husks, roasting poblanos, mixing masa and filling each tamal before the longer steaming stage.
- Rest before serving: A short covered rest after steaming helps the masa firm slightly, so the husk peels away cleanly.
Texture tips
- Keep the masa spreadable: The dough should be soft enough to spread but still hold its shape; if it feels stiff, loosen it gradually with warm stock.
- Steam gently: A steady simmer is better than a hard boil, which can splash water into the steamer and make the masa heavy.
Adjust the heat
- For less heat: Reduce or omit the pickled jalapeños and rely on the roasted poblanos for their mild, sweet pepper flavour.
- For more heat: Use extra finely chopped jalapeños in the rajas mixture, tasting the filling before assembly so the heat stays balanced.
Make-ahead tips
- Assemble ahead: The tamales can be filled and wrapped in advance, then kept covered and chilled until ready to steam.
- Freeze cooked tamales: Cool completely, wrap well and freeze; reheat from frozen by steaming until piping hot throughout.
- Reheat with moisture: Steam refrigerated tamales until hot, or microwave them covered with a splash of water to keep the masa from drying out.

Instructions
- Put the corn husks in a large bowl and cover with very hot water. Weight them down so they stay submerged, then soak until pliable. Drain well and keep covered with a clean tea towel so they do not dry out.
- Heat the oven to 230°C (445°F). Put the poblano peppers on a baking tray and roast, turning once, for 12 to 18 minutes until blistered and blackened in patches. Tip into a bowl, cover, and leave to steam so the skins loosen.
- Peel the peppers, remove the seeds, then cut into thin strips. Thinly slice the onion and finely chop the garlic. Finely chop the pickled jalapeños.
- In a mixing bowl, combine the poblano strips, onion, garlic, pickled jalapeños, dried oregano and 0.5 tsp of the fine sea salt. Toss well and set aside so the flavours mingle while you make the masa.
- In a mixing bowl, whisk together the masa harina, baking powder and the remaining fine sea salt. In a separate bowl, whisk the lard until lightened, then whisk in the masa mixture. Add the warm vegetable stock gradually, mixing until you have a soft, spreadable dough that holds its shape.
- Lay a soaked husk smooth side up, with the wide end closest to you. Spread a thin layer of masa over the centre, leaving a border at the sides and the narrow end. Add a line of the poblano mixture and a small handful of the shredded Mexican cheese blend down the middle.
- Fold the long sides of the husk over the filling so the masa encloses it, then fold up the narrow end. Repeat with the remaining husks, masa and filling. Keep the assembled tamales covered as you work so the husks stay supple.
- Set up a steamer over a large pot with a few centimetres of water, making sure the water does not touch the steamer base. Stand the tamales upright with the open ends facing up, packing them snugly so they do not unravel. Cover and steam over a steady simmer for 60 minutes, topping up with hot water if needed.
- Check a tamal: the husk should peel away cleanly and the masa should feel set and fluffy. Rest the tamales, covered, for 10 minutes to firm slightly. Serve hot so the cheese stays soft and melty.
Recipe notes
Tips
- If the masa feels stiff or cracks when you spread it, whisk in a little more warm vegetable stock, 1 tbsp at a time, until it is easily spreadable.
- Keep the steamer at a gentle, steady simmer; a hard boil can splash water into the tamales and make the masa heavy.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the tamales are steamed until the masa is fully set and piping hot throughout.
Substitutions
- Replace lard with plant-based-butter for a vegetarian-friendly fat that still whips well into the masa.
- Replace shredded Mexican cheese blend with mozzarella for a milder, stretchy melt.
- Replace pickled jalapeños with jalapeno-pepper for a fresher heat; finely chop and mix into the rajas.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat by steaming for 10 to 15 minutes until piping hot, or microwave covered with a splash of water until hot. Freeze cooled tamales well wrapped, then reheat from frozen by steaming for 20 to 25 minutes.
