Sfogliatelle Ricce (Layered Italian Pastries with Ricotta and Semolina)
Why this recipe works
- Defined layers: Rolling the dough into a tight larded log and chilling it before slicing creates the ridged shell structure that defines sfogliatelle ricce.
- Shattering pastry: A hot bake gives the thin layers enough colour to turn crisp while the creamy filling sets inside.
- Stable creamy filling: Semolina thickens the ricotta mixture, giving the centre a smooth, dense texture that holds its shape.
- Classic aroma: Vanilla, cinnamon and orange zest lift the rich dairy filling without making it overly sweet.

Timing notes
- Rest the dough: The initial rest relaxes the strong bread-flour dough, making it much easier to roll thinly without springing back.
- Chill before shaping: The rolled log needs time to firm so the lard stays in distinct layers and each slice opens cleanly into a shell.
- Let the filling settle: A short cool on the tray helps the ricotta-semolina centre firm slightly before serving.
Ingredient notes
- Use lard for structure: Lard helps separate the very thin sheets and encourages the crisp, flaky texture; keep it soft enough to spread but not melted.
- Drain the ricotta well: Excess moisture can loosen the filling and cause leaking during baking, so the ricotta should be thick before mixing.
- Keep the aromatics balanced: Cinnamon and dried orange zest should support the ricotta rather than dominate it; adjust gently for a brighter citrus note.
Authenticity notes
- Neapolitan pastry style: Sfogliatelle ricce are strongly associated with Naples and Campania, known for their shell shape and many crisp ridges.
- Ricce, not frolle: The ricce version uses a rolled, fat-layered dough rather than the smoother shortcrust used for sfogliatelle frolle.
- Serve simply: A dusting of icing sugar and a small coffee are classic companions that let the pastry texture and ricotta filling stand out.
Make-ahead tips
- Prepare the filling ahead: The semolina-ricotta filling can be made earlier and kept chilled until the pastry shells are ready to fill.
- Refresh before serving: Reheat on a baking tray at 180°C (355°F) until hot and crisp again, then dust with icing sugar after reheating.
- Best on the day: The filling keeps, but the layered pastry is at its crispest on the day it is baked.

Instructions
- Make the dough: mix the bread flour and fine sea salt in a bowl. Stir the honey into the water, then add to the flour and mix to a rough dough; knead until smooth and elastic.
- Cover the dough and rest at room temperature for 30 minutes so it relaxes. This makes rolling much easier.
- Meanwhile, make the filling base: bring the whole milk to a gentle simmer in a saucepan. Whisk in the semolina and cook over low heat for 3 to 5 minutes, stirring constantly, until very thick and pulling away from the pan.
- Scrape the semolina mixture into a bowl and let it cool to room temperature. Once cool, whisk in the caster sugar, ricotta, vanilla extract, ground cinnamon and dried orange zest until smooth and thick.
- Roll the rested dough into a long rectangle on a lightly floured surface, as thin as you can manage. Spread a thin, even layer of lard over the surface.
- Starting from a short end, roll the dough up tightly into a log, keeping it as compact as possible. Wrap and chill for 60 minutes to firm up the lard and set the layers.
- Heat the oven to 200°C (390°F) and line a baking tray. Slice the chilled log into 8 equal pieces, then use your thumbs to press and open each slice into a cone-shaped shell with visible layers, keeping the tip closed.
- Spoon the ricotta filling into each shell, filling generously but leaving a small border so it can be sealed. Pinch the edges lightly to close into a shell shape and set on the tray with the seam side down.
- Bake for 25 to 30 minutes until deeply golden and crisp, rotating the tray halfway through for even colouring. Cool on the tray for 10 minutes so the filling sets slightly.
- Dust generously with icing sugar just before serving. Serve warm or at room temperature for the best contrast of crisp pastry and creamy filling.
Recipe notes
Tips
- Drain the ricotta well so the filling stays thick and does not leak during baking.
- Keep the lard soft but not melted; if it starts to melt while you work, chill the dough briefly so the layers stay defined.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised milk and ricotta.
Substitutions
- Replace Honey with Caster sugar (same amount) for a cleaner sweetness in the dough.
- Replace Ground cinnamon with Dried orange zest (add an extra 0.5 tsp) for a brighter citrus-forward filling.
- Replace Whole milk with Water for cooking the Semolina if you want a lighter filling, then ensure the Ricotta is very well drained.
Storage
- Refrigerate up to 2 days
- Store in an airtight container in the fridge. Reheat on a baking tray in a 180°C (355°F) oven for 6 to 8 minutes until hot and crisp again, then dust with icing sugar.
