Malai Kofta in Creamy Tomato Sauce

In malai kofta, soft dumplings made from paneer and potato are fried until golden, then served in a smooth, gently spiced tomato gravy enriched with cashews and cream. It is a rich vegetarian curry often paired with naan or basmati rice, with the sauce providing sweetness, warmth and body around the tender kofta. The dish is best served as soon as the dumplings are warmed through, so they stay delicate rather than breaking down in the gravy. Cardamom, cumin and garam masala give the sauce its recognisable aromatic depth without overwhelming the creamy finish.

Why this recipe works

  • Smooth, rich sauce: Blended tomatoes, softened cashews and cream create a velvety gravy without needing a long simmer.
  • Soft kofta, glossy gravy: Frying gives the paneer and potato dumplings a light golden exterior while the centres remain tender.
  • Warm spice base: Cardamom is bloomed in ghee before the tomato mixture is added, giving the sauce a deeper aromatic base.

Timing notes

  • Chill before frying: The shaped kofta need time in the fridge so the potato and paneer mixture firms up and holds together in the oil.
  • Serve after combining: Add the kofta to the sauce just before serving; leaving them in the gravy too long can make them overly soft.
  • Plan the workflow: Most of the time is hands-on, with separate stages for boiling, blending, simmering and frying.

Common mistakes

  • Frying at the wrong heat: Keep the oil around 170°C (340°F); too cool and the kofta can absorb oil, too hot and they may brown before warming through.
  • Boiling after adding cream: Once the cream is stirred into the sauce, keep the heat gentle to maintain a smooth, stable gravy.
  • Overloading the oil: Fry the kofta in batches so they have space to turn without breaking.

Ingredient notes

  • Use firm paneer: Paneer should crumble cleanly into the mashed potato; very soft or wet paneer can make the kofta mixture harder to shape.
  • Cashews add body: Boiled cashews blend into the tomatoes to thicken the sauce and give it a rounded, creamy texture.
  • Steam-dry the potatoes: Letting the drained potatoes dry briefly helps prevent a loose, sticky kofta mixture.

Make-ahead tips

  • Store separately: Keep the kofta and sauce in separate airtight containers so the dumplings retain a better texture.
  • Reheat gently: Warm the sauce first until piping hot, then add the kofta briefly so they heat through without collapsing.
  • Best freshly combined: The dish is at its best when the kofta are fried and added to the sauce shortly before serving.

  1. Put the cashew nuts in a small saucepan, cover with water, and bring to the boil. Simmer for 10 minutes, then drain and set aside to cool slightly.
  2. Peel the potatoes and cut into even chunks. Boil in well-salted water for 12 to 15 minutes until very tender, then drain well and leave to steam-dry for 5 minutes.
  3. Mash the potatoes until smooth, then crumble in the paneer and add 1 tsp of the fine sea salt. Mix until you have a soft dough, then shape into 12 to 14 small balls and chill for 15 minutes so they firm up.
  4. Meanwhile, roughly chop the tomatoes. Blend the tomatoes with the garlic, ginger root, and the softened cashew nuts until very smooth.
  5. Heat the ghee in a saucepan over medium heat. Add the green cardamom pods and cook for 30 to 60 seconds until fragrant, then pour in the blended tomato mixture carefully.
  6. Simmer the sauce over medium-low heat for 15 to 20 minutes, stirring often, until it thickens and the raw tomato smell cooks out. Stir in the ground cumin, garam masala, and the remaining 1 tsp fine sea salt, then simmer for 2 minutes.
  7. Heat a deep pot of oil to 170°C (340°F). Fry the kofta in batches for 3 to 4 minutes, turning gently, until golden all over, then lift out with a slotted spoon and drain briefly.
  8. Lower the heat under the sauce and stir in the double cream. Add the kofta and warm through for 2 to 3 minutes, spooning sauce over them, but do not boil once the cream is in. Serve straight away while the kofta are still tender.

Serving suggestions

This recipe pairs well with:

Basmati rice Naan

Tips

  • Chilling the kofta before frying helps them hold their shape and reduces the chance of splitting in the oil.
  • Keep the sauce at a gentle simmer and stir often so the cashew and tomato mixture does not catch on the base of the pan.
  • If serving vulnerable groups, use pasteurised dairy and ensure the kofta are heated until piping hot throughout.

Substitutions

  • Replace ghee with unsalted-butter for a similar richness.
  • Replace double cream with cooking-cream for a slightly lighter gravy.
  • Replace cashew nuts with blanched-almonds for a similar creamy body and flavour.

Storage

  • Refrigerate up to 2 days
  • Store the kofta and sauce separately in airtight containers for the best texture. Reheat the sauce gently in a saucepan until piping hot, then add the kofta just long enough to warm through so they do not soften too much.
