Moqueca de Peixe (Brazilian Coconut Fish Stew)

Moqueca de peixe is a Brazilian coastal fish stew known for its gentle cooking and vivid, aromatic broth. White fish is simmered just until opaque in a sauce of tomatoes, onion, pepper, garlic and coconut milk, giving the dish a creamy body without masking the delicate fish. Lime adds brightness, while palm oil brings the distinctive colour and savoury depth associated with many Brazilian versions. Finished with fresh coriander, it is best served straight away, often with rice, when the fish is still tender and the broth is fragrant and spoonable.

Why this recipe works

  • Layered flavour: Onion, pepper, garlic, cumin and tomatoes create a savoury base before the coconut milk and fish are added.
  • Creamy broth: Coconut milk gives the stew body without dairy, softening the acidity of the tomatoes and lime.
  • Fresh finish: Lime juice cuts through the richness of the coconut milk and palm oil, keeping the stew bright.
  • Gentle technique: The fish cooks directly in the sauce, so there is no need for searing or complicated seafood prep.

Ingredient notes

  • Choose firm white fish: Use a firm, skinless white fish that can hold its shape in a stew; very delicate fillets may break apart more easily.
  • Palm oil adds character: Palm oil gives moqueca its distinctive colour and rounded savoury flavour. Olive oil works as a milder alternative, but the finished stew will taste less traditional.
  • Adjust the lime at the end: Taste before serving and add a little more lime juice only if the stew needs extra brightness.

Texture tips

  • Keep the simmer gentle: Once the fish is added, avoid boiling the stew; gentle heat helps the pieces stay moist and intact.
  • Cut the fish generously: Larger chunks are less likely to fall apart during simmering and give the stew a better eating texture.

Serving ideas

  • Serve with rice: Plain white rice is the simplest pairing, soaking up the coconut-tomato broth without competing with the fish.
  • Finish with coriander: Add fresh coriander just before serving so it stays fragrant and vivid.

  1. Cut the fish into large chunks. Finely grate the zest from 1 lime, then squeeze the juice from both limes. Toss the fish with the lime zest and juice and 1 tsp of the fine sea salt.
  2. Heat the palm oil in a large pot over medium heat. Slice the onion and red pepper, then cook with a pinch of the remaining salt for 8 to 10 minutes until softened and glossy. Slice the garlic and stir in for 1 minute until fragrant.
  3. Stir in the ground cumin. Chop the tomatoes and add them to the pot with the remaining salt, then cook for 6 to 8 minutes until the tomatoes start to break down and look saucy. Pour in the coconut milk and bring to a gentle simmer.
  4. Nestle the fish into the stew in a single layer as much as possible. Cover and simmer very gently for 8 to 10 minutes, turning the pieces once, until the fish is just opaque and flakes easily. Take off the heat so the fish stays tender.
  5. Roughly chop the fresh coriander and stir most of it through the stew. Taste and adjust with a little more lime juice if you like it brighter. Serve straight away, scattered with the remaining coriander.

Recipe notes

Tips

  • Keep the stew at a gentle simmer once the fish goes in; a hard boil can make the fish break up and turn dry.
  • If your fish pieces are thinner, start checking at 6 minutes and stop cooking as soon as they turn opaque and flake.
  • If serving vulnerable groups, make sure the fish is cooked until fully opaque and piping hot throughout.

Substitutions

  • Replace Palm oil with Extra-virgin olive oil for a cleaner, less distinctive finish.
  • Replace Fresh coriander with Fresh parsley if you prefer a milder herbal flavour.
  • Replace Red pepper with Yellow pepper for a sweeter, softer pepper note.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in pieces; avoid boiling.
