Fesenjan (Persian Chicken with Walnut and Pomegranate Sauce)
Why this recipe works
- Layered flavour: Softened onion, turmeric, cinnamon and lightly toasted walnuts build a deep savoury base before the chicken is added.
- Tart richness: Pomegranate molasses cuts through the richness of the walnuts, giving the sauce its recognisable sweet-sour balance.
- Naturally thick sauce: Finely ground walnuts simmer into a glossy, full-bodied sauce without needing cream or flour.

Authenticity notes
- Slow-simmered walnut sauce: Fesenjan is defined by walnuts cooked long enough to darken, thicken and release a little oil into the sauce.
- Sweet-tart balance varies: Some versions lean sharper, while others are gently sweet; the pomegranate molasses determines much of that balance.
- Serve with rice: Plain basmati rice is the natural partner, giving the concentrated sauce something fragrant and neutral to soak into.
Ingredient notes
- Grind the walnuts carefully: Pulse them until fine and sandy, stopping before they become a paste, so the sauce thickens smoothly as it simmers.
- Check the molasses: Pomegranate molasses varies in sharpness and sweetness, so taste the finished sauce and adjust the seasoning if needed.
- Use chicken with good flavour: Bone-in thighs suit the long simmer because they stay tender and add extra depth to the sauce.
Common mistakes
- Boiling too hard: Keep the stew at a gentle simmer; a vigorous boil can make the walnut sauce catch on the base of the pan.
- Letting the sauce over-thicken: If the sauce becomes too dense before the chicken is tender, loosen it gradually with a splash of water.
- Adding the molasses too early: Stir it in near the end so its bright tang stays clear rather than becoming dulled by the longer simmer.
Make-ahead tips
- Good for making ahead: The stew keeps well and the sauce often tastes deeper after resting in the fridge.
- Reheat gently: Warm the stew slowly on the hob with a splash of water, stirring often until piping hot throughout.
- Keep rice separate: Store and reheat the basmati rice separately so it stays fluffy rather than absorbing too much sauce.

Basmati rice
Instructions
- Pulse the walnuts in a food processor until finely ground and sandy, stopping before they turn into a paste. Thinly slice the onion.
- Melt the butter in a Dutch oven over medium heat, then cook the onion with a pinch of the salt for 8 to 10 minutes until soft and lightly golden. Stir in the turmeric and cinnamon for 30 seconds until fragrant.
- Add the ground walnuts and stir for 2 minutes to toast lightly. Pour in 700 ml water, bring to a gentle simmer, then cook uncovered for 45 minutes, stirring every 10 minutes, until the sauce darkens and looks glossy with a little walnut oil on the surface.
- Season the chicken thighs all over with the remaining salt and the black pepper. Nestle the chicken into the walnut sauce, cover, and simmer gently for 25 to 30 minutes until the chicken is tender and cooked through.
- Stir in the pomegranate molasses and simmer uncovered for 10 minutes, stirring occasionally, until the sauce is thick enough to coat the back of a spoon. Taste and adjust with a little more salt if needed.
- Meanwhile, rinse the basmati rice until the water runs mostly clear. Put it in a saucepan with 600 ml water, 1 tsp fine sea salt and 15 g butter, bring to the boil, then cover and cook on low for 10 minutes; remove from the heat and rest, covered, for 10 minutes before fluffing.
Recipe notes
Tips
- Keep the fesenjan at a very gentle simmer; a hard boil can cause the walnut sauce to catch on the base of the pan.
- If the sauce thickens too much before the chicken is tender, loosen it with a splash of water and continue simmering.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Butter with Extra-virgin olive oil for a dairy-free version.
- Replace Chicken thighs with Chicken drumsticks for a slightly richer, more gelatinous stew.
Storage
- Refrigerate up to 3 days
- Cool the stew quickly, then refrigerate in a sealed container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge and reheat gently on the hob with a splash of water until piping hot. Store rice separately and reheat with a tablespoon of water in a covered saucepan until hot.
