Ouzi (Slow-Roasted Lamb with Spiced Rice)
Why this recipe works
- Aromatic depth: The yoghurt rub carries garlic, cardamom and cinnamon into the lamb, while the rice absorbs savoury flavour from onion and lamb stock.
- Low, steady roasting: Roasting the bone-in lamb gently gives the connective tissue time to soften, producing meat that carves or pulls apart easily.
- Balanced finish: Toasted almonds bring crunch and richness, while fresh parsley lifts the platter with a clean herbal note.

Timing notes
- Mostly hands-off cooking: The active work is mainly in seasoning the lamb, starting the rice and finishing the garnish; the long roast does most of the work.
- Start the rice near the end: Begin the rice when the lamb is close to tender so both components are ready for serving without the rice sitting too long.
- Rest before carving: Letting the lamb rest for 10 to 15 minutes helps the juices settle before it is sliced or pulled over the rice.
Ingredient notes
- Rinse the rice well: Rinsing basmati until the water runs mostly clear removes surface starch and helps the grains cook up separate rather than sticky.
- Clarified butter adds richness: Using clarified butter gives the rice and almonds a clean buttery flavour and handles medium heat well during toasting.
- Finish with fresh herbs: Fresh parsley works best as a final garnish because it adds brightness against the rich lamb and spiced rice.
Make-ahead tips
- Store lamb and rice separately: Cooling and storing the lamb and rice in separate airtight containers helps preserve the texture of both components.
- Reheat covered: Reheat covered in a 180°C (355°F) oven until piping hot, adding a little water to the rice if it seems dry.
- Suitable for freezing: Freeze cooked lamb and rice for up to 2 months, then defrost overnight in the fridge before reheating thoroughly.

Instructions
- Heat the oven to 160°C (320°F). In a bowl, mix the yogurt with the garlic, ground cardamom, ground cinnamon, fine sea salt and black pepper.
- Pat the lamb dry, then rub the yoghurt mixture all over, working it into any seams. Put the lamb in a roasting pan and roast for 2 hours 30 minutes to 2 hours 45 minutes, until very tender and a skewer slides in easily.
- About 30 minutes before the lamb is ready, rinse the basmati rice in cold water until the water runs mostly clear. Peel and finely chop the yellow onion.
- Melt 2 tbsp of the clarified butter in a saucepan over medium heat, then cook the onion for 8 to 10 minutes until soft and lightly golden. Stir in the rice and cook for 1 minute, then add the lamb stock and bring to a gentle simmer.
- Cover, turn the heat to low and cook for 12 minutes. Remove from the heat and leave, still covered, for 10 minutes, then fluff with a fork.
- Toast the blanched almonds in the remaining 1 tbsp clarified butter in a small frying pan over medium heat for 3 to 5 minutes, stirring, until golden. Finely chop the fresh parsley.
- Rest the lamb for 10 to 15 minutes, then carve or pull into thick slices. Spoon the rice onto a platter, top with the lamb, then scatter over the almonds and parsley to serve.
Recipe notes
Tips
- For the most tender result, keep the oven temperature steady and roast until the meat yields easily when pressed with tongs, rather than relying on time alone.
- If the rice looks a touch wet after resting, fluff it well and leave it uncovered for 2 minutes to let excess steam escape before serving.
- If serving vulnerable groups, ensure the lamb is cooked until piping hot throughout.
Substitutions
- Replace blanched almonds with pistachios for a more traditional nutty finish.
- Replace yogurt with crème fraîche for a richer, slightly tangier coating.
Storage
- Refrigerate up to 3 days
- Cool the lamb and rice quickly, then refrigerate in separate airtight containers. Reheat the lamb and rice in a 180°C (355°F) oven, covered, until piping hot; add a splash of water to the rice if it seems dry. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
