Flautas de Pollo (Crispy Chicken Tortilla Rolls with Crema and Guacamole)
Why this recipe works
- Crisp tortilla shell: Warming the corn tortillas before rolling helps them hold their shape, while frying seam-side down first keeps the flautas tight and crisp.
- Seasoned chicken filling: The chicken simmers with onion, garlic and cumin, then is coated in the reduced cooking liquid for a savoury, well-seasoned centre.
- Fresh contrast: Lime, avocado, crema and lettuce cut through the richness of the fried tortillas and keep each serving bright rather than heavy.

Texture tips
- Add toppings last: Serve the crema, avocado and lettuce after frying so the tortillas stay crisp at the table.
- Keep the oil lively: Fry over steady medium-high heat so the tortillas crisp quickly; if the oil is too cool, they can absorb excess oil.
- Do not overfill: Use enough chicken to make a firm roll, but avoid stuffing the tortillas so tightly that they split during frying.
Ingredient notes
- Use pliable corn tortillas: Corn tortillas need to be warmed before rolling; if they crack, give them a little more time in the dry pan.
- Choose a ripe avocado: A ripe avocado should mash easily but still hold some texture, giving the topping a chunky, fresh finish.
- Season with lime to taste: Lime lifts both the avocado and crema, so add it gradually until the toppings taste bright and balanced.
Make-ahead tips
- Keep toppings separate: Store cooked flautas apart from the crema, avocado, lettuce and lime so the tortillas do not soften.
- Re-crisp in the oven: Reheat cooked flautas on a baking tray at 200°C (390°F) until piping hot and crisp before adding the fresh toppings.
- Freeze without toppings: Cooked flautas can be frozen without the toppings, then reheated from frozen until hot and crisp.
Authenticity notes
- Classic rolled format: Flautas are defined by their tightly rolled shape and crisp fried tortilla, usually served with cool, fresh toppings for contrast.
- Toppings vary: Crema, avocado, lettuce and lime are familiar accompaniments, but flautas are also often finished with salsa, cheese or extra shredded vegetables.

Instructions
- Thinly slice the onion and finely grate the garlic. Cut the lime into wedges. Shred the iceberg lettuce and set aside.
- Put the chicken thighs in a saucepan with half the onion, half the garlic, the ground cumin, water, fine sea salt and black pepper. Bring to a gentle simmer, cover, and cook for 12 to 15 minutes until the chicken is cooked through and tender. Lift the chicken out and shred it, then simmer the cooking liquid uncovered for 3 to 4 minutes to reduce slightly.
- Return the shredded chicken to the pan and stir to coat in the reduced liquid, then take off the heat. Warm the corn tortillas briefly in a dry frying pan so they are pliable. Roll each tortilla tightly with the chicken filling and press the seam to help it hold.
- Heat the vegetable oil in a large frying pan over medium-high heat until shimmering. Fry the flautas seam-side down first, turning as needed, for 2 to 3 minutes total until deep golden and crisp. Transfer to a plate and repeat with the remaining flautas.
- Mash the avocado in a bowl with a squeeze of lime and the remaining garlic, keeping it a little chunky. Loosen the crème fraiche with a small squeeze of lime and a pinch of fine sea salt. Serve the flautas topped with crème fraiche and avocado, with shredded lettuce and extra lime wedges on the side.
Recipe notes
Tips
- If your tortillas crack when rolling, warm them a little longer so they soften before filling.
- Keep the oil at a steady medium-high heat so the flautas crisp quickly without soaking up oil; if they brown too fast, lower the heat slightly.
- Food safety: make sure the chicken is cooked through and piping hot before shredding and filling.
Substitutions
- Replace chicken thighs with chicken breast for a leaner filling; simmer until just cooked through so it stays juicy.
- Replace crème fraiche with greek yogurt for a lighter topping with a tangier finish.
- Replace lime with lemon if needed; it will be slightly less aromatic but still bright.
Storage
- Refrigerate up to 2 days
- Store flautas and toppings separately. Refrigerate cooked flautas in an airtight container, then reheat on a baking tray at 200°C (390°F) for 8 to 10 minutes until piping hot and crisp; add the crème fraiche, avocado, lettuce and lime after reheating. Freeze cooked flautas (without toppings) for up to 2 months and reheat from frozen at 200°C (390°F) for 15 to 18 minutes.
