Jam Roly-Poly (Steamed Suet Pudding with Jam)
Why this recipe works
- Classic steamed texture: Steaming keeps the suet pastry soft, moist and evenly tender throughout.
- Sweet but not heavy: The plain suet dough tempers the jam filling, while warm custard adds richness without overwhelming the fruit.
- Good for planning ahead: Leftover slices reheat well in a steamer and the pudding can be frozen once cooled.

Timing notes
- Serve while warm: Jam roly-poly is at its best shortly after steaming, when the pastry is soft and the jam filling is warm.
- Mostly hands-off cooking: The dough comes together quickly; most of the time is the gentle steaming stage.
Texture tips
- Keep the steam steady: A gentle, consistent simmer helps the pudding cook evenly without water splashing into the steamer.
- Seal the roll well: Pinching the seam and placing it seam-side down helps keep the jam inside as the pudding steams.
Ingredient notes
- Suet matters: Beef suet gives the pudding its characteristic soft, rich crumb and traditional flavour.
- Choose the jam to suit the finish: Strawberry gives a familiar sweet centre, while apricot makes the filling a little brighter and tangier.
Make-ahead tips
- Reheat gently: Steam chilled slices until piping hot so the pastry softens again without drying out.
- Freeze after steaming: Cool the pudding completely, wrap well and freeze; defrost overnight in the fridge before reheating.

Instructions
- Set up a steamer over a large pot of gently simmering water, making sure the water level sits below the steamer. Put the lid on and let it come up to a steady simmer while you make the pudding.
- In a mixing bowl, whisk together the plain flour, baking powder and caster sugar. Stir in the beef suet until evenly distributed.
- Mix the whole milk with the vanilla extract, then pour it into the dry ingredients. Stir with a spatula until you have a soft, slightly tacky dough; if it looks dry, add a small splash more milk from the measured amount as needed.
- Lightly flour a work surface and roll the dough into a rectangle about 25 x 30 cm. Spread the strawberry jam evenly over the dough, leaving a 2 cm border along one long edge.
- Roll the dough up tightly from the jam-covered long edge to make a neat log, then pinch the seam to seal. Place the roll seam-side down in the steamer, cover with the lid, and steam for 60 minutes, topping up the pot with boiling water if needed to keep it simmering.
- Warm the custard gently in a saucepan over low heat, stirring often, until hot but not boiling. Slice the jam roly-poly and serve straight away with the warm custard.
Recipe notes
Tips
- Keep the water at a gentle simmer throughout so the pudding steams steadily without splashing into it.
- For a neat spiral, spread the strawberry jam in an even layer and roll firmly, sealing the seam well.
- If serving to young children, pregnant people, older adults, or anyone immunocompromised, use custard made with pasteurised egg and heat it until properly hot.
Substitutions
- Replace Strawberry jam with Apricot jam for a lighter, tangier filling.
- Replace Whole milk with Low-fat milk for a slightly lighter suet pastry.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate the sliced pudding in an airtight container. Reheat slices in a steamer for 10–15 minutes until piping hot; freeze well-wrapped for up to 2 months and defrost overnight in the fridge before reheating.
