German-Style Barley Grain Bowl with Mustard Dressing and Gherkins
Why this recipe works
- Chewy, tender and sharp: Pearl barley keeps a pleasant bite against soft roasted roots, while gherkins add crisp acidity.
- Bright mustard dressing: Dijon mustard and apple cider vinegar cut through the earthy vegetables and help the grain bowl taste lively rather than heavy.
- Good for lunches: The bowl holds well in the fridge and can be served cold, at room temperature or gently warmed.

Texture tips
- Drain the barley well: Let the cooked barley steam-dry in the warm pan before dressing it so the grains stay separate and the bowl does not turn watery.
- Give the vegetables space: Spread the root vegetables across the tray rather than piling them up; crowded pieces steam instead of browning at the edges.
Ingredient notes
- Use pearled barley: Pearled barley cooks more quickly than hulled barley and gives the bowl its rounded, chewy texture.
- Adjust the sharpness: Add a little extra vinegar just before serving if the bowl needs more brightness, especially after chilling.
- Mustard choice: Whole-grain mustard can replace Dijon for a more textured dressing with a slightly rustic feel.
Make-ahead tips
- Make ahead for lunch: Cook the barley and roast the vegetables in advance, then refrigerate until needed.
- Keep the finish fresh: For the best texture, add the gherkins, dill and final spoonful of dressing shortly before serving.
- Warm gently: If serving warm, heat gently with a small splash of water rather than cooking it hard, which can soften the barley too much.
Serving ideas
- Serve with greens: A simple leafy salad or steamed greens works well alongside the tangy, earthy bowl.
- Add extra crunch: Finish with more chopped gherkins if you want a sharper, crunchier bowl.

Instructions
- Heat the oven to 220°C (430°F). Rinse the pearled barley in a colander, then tip into a saucepan with plenty of salted water and bring to the boil.
- Boil the barley for 25 to 30 minutes until tender with a little chew. Drain well, then return it to the warm pan off the heat to steam-dry for 2 minutes.
- Meanwhile, peel the carrot, parsnip and beetroot, then cut into bite-size chunks. Toss on a baking tray with 2 tbsp of the extra virgin olive oil, 1 tsp of the fine sea salt and the black pepper.
- Roast for 20 to 25 minutes, turning once, until browned at the edges and tender when pierced. If the tray looks dry, drizzle over a little more olive oil.
- In a mixing bowl, whisk the dijon mustard with the apple cider vinegar, the remaining 1 tbsp extra virgin olive oil and the remaining 1 tsp fine sea salt. Taste and adjust with a little more vinegar if you want it sharper.
- Roughly chop the dill gherkin pickles and finely chop the fresh dill. Fold the barley with most of the dressing, then gently mix in the roasted vegetables, gherkins and half the dill.
- Divide between bowls and spoon over the remaining dressing. Finish with the remaining fresh dill and serve at room temperature or slightly warm.
