Chicken Korma
Why this recipe works
- Silky sauce: Soaked cashews blended with yoghurt create a smooth base, while cream added at the end gives the korma a rich, rounded finish.
- Gentle depth: Browning the chicken and slowly softening the onion build savoury flavour before the ginger, garlic and spices are added.
- Mild and comforting: The warm spices are aromatic rather than hot, making the curry rich, mellow and easy to serve for a wide range of tastes.

Ingredient notes
- Use unsalted cashews: Unsalted cashews give the sauce body and natural sweetness without making the seasoning harder to control.
- Choose plain yoghurt: Plain yoghurt keeps the sauce balanced and tangy; avoid sweetened or flavoured varieties.
- Cream affects richness: Double cream gives the fullest finish, while cooking cream makes the sauce a little lighter.
Texture tips
- Blend until completely smooth: For a refined korma sauce, blend the soaked cashews and yoghurt thoroughly, scraping down the blender before blending again.
- Keep the finish gentle: After adding the cream, warm the curry over low heat rather than boiling it, which helps keep the sauce silky.
- Use chicken thighs for tenderness: Boneless chicken thighs stay moist during simmering and suit the rich sauce particularly well.
Make-ahead tips
- Make ahead for easy serving: The curry can be cooked in advance, cooled quickly and refrigerated in a sealed container for up to 3 days.
- Freezes well: Freeze in portions for up to 2 months, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm over low heat until piping hot, adding a splash of water if the sauce has thickened too much.
Serving ideas
- Serve with rice: Steamed rice is ideal for absorbing the creamy sauce without competing with the mild spices.
- Add naan: Naan works well alongside korma for scooping up the sauce and making the meal more substantial.

Ingredients
Instructions
- Put the yogurt and cashew nuts in a bowl and cover with just-boiled water. Leave to soak for 15 minutes, then drain well. Tip into a blender with a splash of water and blend until very smooth.
- Cut the chicken thighs into bite-sized pieces and season with 1 tsp of the fine sea salt. Heat the ghee in a large frying pan over a medium-high heat. Brown the chicken for 4 to 5 minutes, then lift onto a plate.
- Reduce the heat to medium and add the onion to the same pan. Cook for 10 to 12 minutes, stirring often, until very soft and lightly golden. If it starts to catch, add a splash of water and scrape up the browned bits.
- Finely grate the garlic and ginger root into the pan and cook for 1 minute until fragrant. Stir in the ground coriander, ground turmeric and garam masala and cook for 30 seconds. Add the remaining salt.
- Pour in the blended cashew and yogurt mixture and stir until the sauce is smooth. Return the chicken and any resting juices to the pan, then bring to a gentle simmer. Cook for 12 to 15 minutes, stirring occasionally, until the chicken is cooked through and the sauce lightly thickens.
- Lower the heat and stir in the double cream. Warm gently for 2 minutes without boiling, until silky and rich. Taste and adjust seasoning with a pinch more salt if needed, then serve.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the heat low after adding the double cream; boiling can cause the sauce to split.
- For the smoothest korma, blend the soaked cashew nuts and yogurt until completely silky, then scrape down the blender once and blend again.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout and use pasteurised yogurt.
Substitutions
- Replace ghee with butter for a similar richness.
- Replace double cream with cooking cream for a lighter finish.
- Replace chicken thighs with chicken breast, reducing the simmering time to 8 to 10 minutes to keep it juicy.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a pan over a low heat until piping hot, adding a splash of water to loosen if needed. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
