Chicken Tikka Salad Bowl

Chicken tikka is recognised for its yoghurt-spiced marinade, which tenderises the meat and helps it take on light charring over a hot grill. In this salad bowl, those familiar tikka flavours are served in a fresher, everyday format: warm slices of grilled chicken thigh sit over butterhead lettuce, cucumber, tomato and red onion, with a lemon and coriander yoghurt dressing adding cooling acidity. The result is hearty enough for lunch but still crisp and bright, with mild spice, juicy chicken and a clean, tangy finish. It is also easy to adapt, whether you prefer richer thigh meat or a leaner chicken breast version.

Why this recipe works

  • Spiced yoghurt marinade: Yoghurt, ginger, garlic, cumin, coriander and paprika season the chicken while helping it cook up tender and aromatic.
  • Warm and crisp contrast: Lightly charred sliced chicken sits over cool lettuce, cucumber, tomato and red onion for a bowl with freshness and substance.
  • Bright yoghurt dressing: Lemon zest, lemon juice and coriander sharpen the yoghurt dressing, cutting through the richness of the grilled chicken.

Timing notes

  • Short marinating window: The chicken marinates while the salad is prepared, but a longer rest in the fridge will give the spices more time to season the meat.
  • Rest before slicing: Let the grilled chicken rest briefly before slicing so the juices settle and the salad does not become watery.

Texture tips

  • Keep the chicken juicy: Chicken thighs are forgiving on the grill; avoid moving them too often so they can char without drying out.
  • Dress at the last moment: Spoon the yoghurt dressing over the bowls just before serving to keep the lettuce crisp.

Ingredient swaps

  • Use chicken breast instead: Chicken breast works well for a leaner bowl, but grill it for a shorter time and remove it as soon as it is cooked through.
  • Swap the ghee: Butter can replace ghee for similar richness, though it browns more quickly and needs closer attention on the grill.

Make-ahead tips

  • Store in separate containers: Keep the chicken, salad and dressing apart in the fridge so the vegetables stay fresh and the dressing remains pourable.
  • Reheat gently: Warm the chicken in a 180°C (355°F) oven until piping hot, then slice and serve over the cold salad.

  1. In a mixing bowl, stir together the yogurt, garlic, ginger, ground cumin, ground coriander and sweet paprika. Add the chicken thighs and turn to coat well. Set aside to marinate while you prepare the salad.
  2. Separate the butterhead lettuce leaves, then tear into bite-sized pieces. Slice the cucumber, chop the tomatoes, and thinly slice the red onion. Put everything into a large bowl and toss lightly.
  3. Finely chop most of the fresh coriander, reserving a little to finish. Zest the lemon, then squeeze the juice. In a small bowl, mix a few spoonfuls of the yogurt marinade with the lemon zest, lemon juice and chopped coriander to make a pourable dressing.
  4. Heat a grill to medium-high and brush the grates with the ghee. Lift the chicken from the marinade, letting excess drip back into the bowl, then grill for 5 to 7 minutes per side until lightly charred and cooked through. Rest for 3 minutes, then slice.
  5. Divide the salad between two bowls and top with the sliced chicken. Spoon over the coriander yoghurt dressing and scatter over the reserved coriander. Serve with extra lemon wedges if you like.

Recipe notes

Tips

  • For the best char without drying the chicken, let the grill get properly hot before you start and avoid moving the chicken too often.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and cook the chicken until piping hot all the way through.

Substitutions

  • Replace ghee with butter for a similar richness, but watch it closely as it can brown faster on the grill.
  • Replace chicken thighs with chicken breast for a leaner bowl; grill for a shorter time and pull it as soon as it is cooked through.

Storage

  • Refrigerate up to 2 days
  • Store the chicken, salad, and dressing separately in airtight containers. Reheat the chicken in a 180°C (355°F) oven until piping hot, and dress the salad just before serving.
