Sindhi Kadhi with Rice

Sindhi kadhi is a tangy, vegetable-rich curry from Sindhi cuisine, thickened with chickpea flour rather than lentils or coconut. Tamarind gives the sauce its characteristic sour depth, while mustard seeds, curry leaves, ginger, chilli, turmeric and cumin make it aromatic without overwhelming the vegetables. Potato and cauliflower bring body, okra adds a gently silky texture, and the finished kadhi is glossy, hearty and full of sauce. Served over steamed basmati rice, it makes a satisfying everyday meal with a clean sour-savoury finish and plenty of room to adjust the tang or vegetable mix to taste.

Why this recipe works

  • Tempered spices: Mustard seeds, curry leaves, ginger and chilli are bloomed in ghee first, giving the kadhi a fragrant base before the vegetables and gravy are added.
  • Clean tang: Tamarind gives the sauce its distinctive sourness, balancing the earthy chickpea flour and starchy vegetables.
  • Built for rice: The thick, savoury gravy coats the vegetables and soaks into basmati rice, making the dish filling without feeling heavy.

Authenticity notes

  • Sindhi-style kadhi: This style relies on chickpea flour and tamarind for body and tang, rather than the yoghurt base used in many other kadhis.
  • Served with rice: Steamed basmati rice is the natural pairing, giving the thick kadhi plenty to soak into.

Adjust the heat

  • For a gentler kadhi: Use less green chilli or remove the seeds before slicing.
  • For more heat: Add extra green chilli to the tempering so the heat infuses the ghee before the gravy goes in.

Common mistakes

  • Simmer gently: A hard boil can make the chickpea-flour mixture catch on the base of the pot; keep it at a steady simmer and stir often.
  • Avoid lumps: Pour in the chickpea-flour mixture while stirring continuously so it thickens smoothly.
  • Add okra near the end: Okra only needs a short simmer; adding it too early can make it overly soft.

Make-ahead tips

  • Store rice and kadhi apart: Keeping the rice separate prevents it from absorbing too much sauce in the fridge.
  • Loosen when reheating: Warm the kadhi gently with a splash of water, stirring until smooth and piping hot.
  • Freezer-friendly: The kadhi can be frozen after cooking; cool it quickly first, then reheat thoroughly before serving.

  1. Rinse the basmati rice in cold water until the water runs mostly clear. Put it in a saucepan with 400 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave covered for 10 minutes, then fluff with a fork.
  2. Meanwhile, peel and cut the potato into bite-size pieces, then break the cauliflower into small florets. Trim the okra and cut into 2 cm pieces. Finely grate the ginger and finely slice the green chilli.
  3. In a mixing bowl, whisk the chickpea flour with the ground turmeric, ground cumin and 500 ml water until smooth and lump-free. Whisk in the tamarind paste and the remaining 0.5 tsp fine sea salt. Set aside while you start the tempering.
  4. Heat the ghee in a large pot over medium heat. Add the mustard seeds and cook until they start to pop, then add the curry leaves, ginger and green chilli and cook for 30 to 60 seconds until fragrant. Tip in the potato and cauliflower and stir to coat in the spiced ghee.
  5. Pour in the chickpea flour mixture, stirring constantly as you add it to prevent lumps. Bring to a gentle simmer, then cook for 12 minutes, stirring often, until the kadhi thickens and the potato is nearly tender. If it thickens too quickly, loosen with a splash of water from the remaining measured water.
  6. Add the okra and simmer for 6 to 8 minutes until the okra is tender and the kadhi is thick, glossy and fragrant. Taste and adjust with a little more tamarind paste if you want it tangier. Serve the kadhi hot over the steamed basmati rice.

Recipe notes

Tips

  • Keep the kadhi at a gentle simmer and stir regularly, especially after adding the chickpea flour mixture, to stop it catching on the base of the pot.
  • If you are pregnant, elderly, or immunocompromised, ensure the kadhi is simmered thoroughly and served piping hot.

Substitutions

  • Replace ghee with olive oil for a fully vegan finish.
  • Replace okra with green beans for a similar bite and a cleaner, less silky texture.

Storage

  • Refrigerate up to 3 days
  • Cool the kadhi and rice quickly, then refrigerate in separate airtight containers. Reheat the kadhi in a saucepan over low heat with a splash of water until piping hot, and reheat the rice in the microwave with a spoonful of water until steaming.
