Fiesta Tapas Platter (Tortilla Española, Gambas al Ajillo and Pan con Tomate)
Why this recipe works
- Tender tortilla texture: Cooking the potatoes and onion gently in olive oil gives the tortilla its soft, cohesive centre without browning the slices.
- Simple Spanish flavours: Garlic, paprika, parsley, ripe tomato and extra-virgin olive oil create clear, savoury flavours across the platter without heavy sauces.
- Easy to serve for sharing: The components suit a platter format: prawns can be cooked last, while the tortilla and pan con tomate can wait briefly at room temperature.

Timing notes
- Rest the tortilla before slicing: Letting the tortilla stand helps it finish setting and makes it easier to cut into neat wedges.
- Cook the prawns last: Gambas al ajillo are best served warm, so prepare the tortilla and tomato toast first, then cook the prawns just before serving.
- Use the tortilla cooking time well: While the potatoes soften, prepare the tomatoes, garlic and parsley so the final assembly moves quickly.
Common mistakes
- Browning the tortilla potatoes: Keep the heat moderate to low; the potatoes should soften in the oil rather than crisp or colour.
- Letting the garlic brown: Garlic for the prawns should become fragrant but not dark, as browned garlic can turn bitter quickly.
- Overcooking the prawns: Remove the prawns from the heat as soon as they turn pink and opaque so they stay juicy.
Make-ahead tips
- Make the tortilla ahead: The tortilla can be cooked in advance and served at room temperature, or gently reheated before serving.
- Keep tomato toast separate: For the best texture, store the grated tomato and toast separately and assemble the pan con tomate close to serving.
- Reheat prawns briefly: If reheating, warm the prawns only until piping hot; extended cooking will make them firm and dry.
Equipment you'll need
Ingredients
Tortilla española
Gambas al ajillo
Pan con tomate
Instructions
- Peel the potatoes, then slice them thinly (about 3 mm). Halve and thinly slice the onion.
- Heat the olive oil for the tortilla in a large frying pan over medium-low heat. Add the potatoes, onion and fine sea salt, then cook gently for 18 to 22 minutes, stirring often, until the potatoes are tender but not browned.
- Meanwhile, crack the eggs into a mixing bowl and whisk until blended. When the potatoes are tender, lift them out with a slotted spoon into the eggs and let cool for 2 minutes, then stir to coat.
- Pour off most of the oil from the pan, leaving a thin layer. Return the pan to medium heat, add the egg and potato mixture, and cook for 4 to 5 minutes until the edges are set and the base is golden.
- Flip the tortilla: slide it onto a plate, invert the pan over the plate, then turn everything back into the pan. Cook for 3 to 4 minutes more until set to your liking, then slide onto a board and rest for 10 minutes before cutting into wedges.
- For the pan con tomate, toast the white bread in a dry frying pan over medium heat for 1 to 2 minutes per side until lightly golden. Halve the tomatoes and grate the cut sides into a bowl, discarding the skins.
- Spoon the grated tomato over the toast, then drizzle with the olive oil for the pan con tomate and sprinkle with fine sea salt. Set aside at room temperature while you cook the prawns.
- Thinly slice the garlic and roughly chop the parsley. Heat the olive oil for the gambas in a frying pan over medium heat, add the garlic and cook for 30 to 60 seconds until fragrant but not browned.
- Stir in the sweet paprika, then add the prawns and fine sea salt. Cook for 2 to 3 minutes, tossing, until the prawns are pink and just cooked through, then take off the heat and stir through the parsley.
- Arrange the tortilla wedges, gambas al ajillo and pan con tomate on a large board or platter. Serve the prawns warm, with the tortilla and toast warm or at room temperature.
Recipe notes
Tips
- Keep the tortilla heat low and steady so the potatoes soften in the oil without browning; this gives the classic tender texture.
- If you prefer a softer centre, cook the tortilla for 1 to 2 minutes less after flipping, then let it finish setting as it rests.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the tortilla until the centre is fully set and the eggs are no longer runny.
Substitutions
- Replace White bread with crusty white bread for a sturdier base that holds the tomato well.
- Replace Sweet paprika with Smoked paprika for a deeper, smoky flavour in the gambas al ajillo.
- Replace Fresh parsley with Fresh coriander for a brighter, more citrusy finish.
Storage
- Refrigerate up to 2 days
- Store the tortilla and prawns in separate airtight containers in the fridge. Reheat the tortilla in a frying pan over low heat or in a 180°C (355°F) oven until hot; reheat the prawns briefly in a frying pan just until piping hot. Pan con tomate is best assembled fresh; keep the tomato mixture and toast separate if making ahead.
