Roasted Vegetable Provençal Bowl with Quinoa and Olives
Why this recipe works
- Herby, savoury base: Garlic, thyme and olive oil season the vegetables as they roast, building flavour directly on the tray.
- Bright finish: Lemon cuts through the richness of the olive oil and lifts the sweetness of the roasted vegetables.
- Good warm or room temperature: The quinoa and roasted vegetables hold their texture well, making the bowl practical for packed lunches or prepared-ahead meals.

Texture tips
- Keep the vegetables spread out: A single layer on the tray helps moisture evaporate so the vegetables roast rather than steam.
- Cut evenly sized pieces: Keeping the aubergine, courgette and pepper in similar chunks helps them soften at the same pace.
Ingredient notes
- Choose firm vegetables: Firm aubergine, courgette and peppers hold their shape better during roasting and give the bowl more texture.
- Add lemon to taste: The olives bring saltiness, so use the lemon as the final adjustment for freshness rather than adding more salt too early.
Make-ahead tips
- Cook ahead for lunches: The quinoa and vegetables can be cooked in advance, cooled, and refrigerated in a sealed container.
- Refresh after reheating: Reheat until piping hot, then finish with a fresh squeeze of lemon to bring back brightness.
Ingredient swaps
- Swap the herb: Fresh rosemary can replace thyme for a more robust, piney flavour.
- Change the grain: Bulgur can stand in for quinoa if you prefer a more traditional Mediterranean-style grain base.

Instructions
- Heat the oven to 220°C (430°F). Rinse the quinoa well in a sieve, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt.
- Bring the quinoa to the boil, then cover and simmer on low for 12–15 minutes until the water is absorbed. Take off the heat and leave, covered, for 5 minutes, then fluff with a fork.
- Meanwhile, cut the aubergine and courgette into bite-size chunks, and cut the red pepper into similar pieces. Halve the cherry tomatoes and lightly crush the garlic cloves with the side of a knife, then peel.
- Tip the vegetables onto a baking tray and add the garlic, thyme sprigs, extra virgin olive oil, and the remaining 1 tsp fine sea salt. Toss well, then spread out so the vegetables are in a single layer.
- Roast for 18–22 minutes, turning once halfway, until the vegetables are tender and lightly caramelised at the edges. If the tomatoes are catching, nudge them towards the centre of the tray.
- Remove the thyme sprigs, then stir the black pitted olives through the hot vegetables. Halve the lemon and squeeze over the tray to taste.
- Spoon the quinoa into bowls and pile the roasted Provençal vegetables on top, including any tray juices. Finish with an extra squeeze of lemon if you like, and serve warm or at room temperature.

Tips
- For better caramelisation, keep the vegetables in a single layer with a little space between pieces; use a second tray if needed.
- If you are serving at room temperature, toss the quinoa with a little of the tray juices so it stays moist and flavourful.
Substitutions
- Replace Fresh thyme with Fresh rosemary for a more robust, piney flavour.
- Replace Quinoa with Bulgur for a more traditional Mediterranean-style grain base.
