Bolo Rei (King’s Cake)

Recognisable by its crown-like ring shape, Bolo Rei is Portugal’s traditional Christmas sweet bread, made from an enriched yeasted dough and decorated with fruit and nuts. Butter, eggs and a little port give the crumb richness and gentle warmth, while candied orange peel and raisins bring sweetness throughout the loaf. After baking until deep golden, the ring is finished with roasted almonds and a snowy dusting of icing sugar. It sits somewhere between festive bread and celebration cake: soft, fragrant, lightly chewy and ideal for slicing with coffee, tea or a glass of something sweet.

Why this recipe works

  • Classic enriched dough: Milk, eggs and butter create the tender, brioche-like structure expected from a festive sweet bread.
  • Festive depth: Port wine, candied orange peel and raisins give the loaf warmth, citrus sweetness and gentle fruitiness.
  • Soft crumb, nutty finish: The bread stays plush inside while toasted almonds add a crisp, fragrant contrast on top.

Timing notes

  • Let the dough rise fully: The first rise should double the dough; the shaped ring should look puffy and spring back slowly when pressed.
  • Rest before shaping: A short rest after adding the fruit relaxes the dough, making it easier to form a neat ring.
  • Cool before dusting: Let the loaf cool completely before adding icing sugar so the finish stays powdery rather than dissolving.

Texture tips

  • Add butter gradually: Work the softened butter in a little at a time so the dough can absorb it properly and develop a smooth, elastic texture.
  • Protect the crust if needed: If the top colours too quickly, cover it loosely with foil towards the end of baking while the centre finishes cooking.

Authenticity notes

  • Portuguese holiday bake: Bolo Rei is closely associated with the Christmas season in Portugal, often served as a centrepiece sweet bread.
  • Ring-shaped presentation: The crown-like ring shape and fruit-studded dough are defining features of the bake.

Make-ahead tips

  • Bake ahead: The loaf can be baked in advance and kept airtight, then dusted with icing sugar shortly before serving.
  • Freeze in slices: Freeze well-wrapped slices, then defrost at room temperature for an easy festive bake to serve later.
  • Refresh gently: Warm defrosted slices briefly in a 160°C (320°F) oven to revive the crumb before serving.

Instructions

  1. Warm the milk until just lukewarm, then stir in the caster sugar and instant yeast. Leave for 5 minutes until the surface looks slightly foamy.
  2. Put the flour and fine sea salt into the bowl of a stand mixer. Add the yeast mixture, the eggs and the port, then mix with the dough hook on low speed until a rough dough forms.
  3. With the mixer running on medium-low, add the softened butter a little at a time, letting each addition disappear before adding more. Knead for 8 to 10 minutes until smooth, elastic and only slightly tacky.
  4. Tip the dough into a mixing bowl and cover. Leave in a warm place for 60 to 75 minutes, or until doubled in size.
  5. Punch down the dough, then knead in the candied orange peel and raisins until evenly distributed. Shape into a ball, cover, and rest for 10 minutes to relax the gluten.
  6. Line a baking tray, then shape the dough into a ring and place it on the tray. Cover and prove for 45 to 60 minutes, until puffy and the dough springs back slowly when pressed.
  7. Heat the oven to 180°C (355°F). Press the roasted almonds onto the top of the ring, then bake for 25 to 30 minutes until deep golden and the loaf sounds hollow when tapped underneath.
  8. Cool on the tray for 10 minutes, then transfer to a rack to cool completely. Dust generously with icing sugar before serving.

Recipe notes

Tips

  • If the top is browning too quickly, loosely cover with foil for the last 10 minutes of baking.
  • For an even fruit distribution, toss the candied orange peel and raisins through a spoonful of the flour before kneading them in.
  • If serving to children or anyone avoiding alcohol, note that some alcohol may remain after baking; consider offering a different bake for those guests.

Substitutions

  • Replace Port wine with dry sherry for a similar fortified-wine warmth.
  • Replace Raisin with sultana for a slightly juicier, milder sweetness.
  • Replace Roasted almonds with pistachios for a different nutty finish.

Storage

  • Refrigerate up to 3 days
  • Keep in an airtight container at room temperature for up to 2 days, or in the fridge for up to 3 days. Freeze slices well wrapped for up to 2 months; defrost at room temperature and refresh in a 160°C (320°F) oven for 8 to 10 minutes.
