Lamb Kleftiko (Slow-Roasted Lamb with Garlic, Lemon and Potatoes)
Why this recipe works
- Sealed slow roasting: Covering the pan tightly lets the lamb roast gently in its own juices, keeping the meat tender while building a rich cooking liquor.
- Classic Greek flavours: Garlic, lemon, oregano, olive oil and white wine give the lamb a bright, savoury depth without needing a complicated marinade.
- Potatoes cook with the lamb: The potatoes soften in the same pan, absorbing the roasting juices and becoming a built-in side dish.

Timing notes
- Mostly hands-off: The active preparation is short; most of the time is slow roasting, so plan around the oven time rather than the prep.
- Rest before serving: Letting the lamb rest after roasting helps the juices settle and makes the meat easier to carve or pull from the bone.
Authenticity notes
- Covered roasting style: Kleftiko is known for lamb cooked in a sealed environment until very tender; foil over a roasting pan gives a practical home-kitchen version of that approach.
- Lemon, oregano and potatoes: The combination of lamb, lemon, oregano and potatoes is central to the dish’s recognisable Greek flavour profile.
Make-ahead tips
- Prepare aromatics ahead: The garlic, lemon and oregano mixture can be prepared earlier in the day, then rubbed over the lamb before roasting.
- Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a little water if the roasting juices need loosening.
- Freeze leftovers: Cooked lamb and potatoes can be frozen in portions, then defrosted overnight in the fridge before reheating.
Common mistakes
- Do not rush the slow roast: A higher oven temperature at the start can dry the lamb before it becomes tender; keep the covered roast gentle, then increase the heat only for browning.
- Keep the pan sealed: If the foil is loose, too much steam escapes and the lamb may dry out before it softens properly.
- Watch the pan juices: If the roasting pan looks dry during cooking, add a small splash of wine or water and reseal it to prevent scorching.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Pat the lamb dry, then season all over with the fine sea salt and black pepper.
- Peel and lightly crush the garlic cloves. Use the tip of a knife to make small slits all over the lamb and push the garlic into the slits.
- Finely grate the zest of 1 lemon, then squeeze the juice from both lemons. Strip the leaves from half the oregano sprigs and chop them, then mix with the lemon zest, half the lemon juice and 3 tbsp of the olive oil.
- Rub the lemon and oregano mixture all over the lamb. Put the lamb into a roasting pan, scatter over the remaining oregano sprigs, then pour in the dry white wine and the remaining lemon juice.
- Halve any larger mixed baby potatoes so they cook evenly, then add them to the pan around the lamb. Drizzle the potatoes with the remaining 2 tbsp olive oil and turn them in the pan juices.
- Cover the roasting pan tightly with foil. Roast for 3 hours, turning the potatoes once halfway through, until the lamb is very tender and the potatoes are soft.
- Remove the foil and increase the oven to 220°C (430°F). Roast uncovered for 20 minutes until the lamb and potatoes deepen in colour and the pan juices look slightly reduced.
- Rest the lamb in the pan, loosely covered with foil, for 15 minutes. Carve or pull the lamb from the bone and serve with the potatoes and roasting juices.
Recipe notes
Tips
- For the most tender result, keep the foil tightly sealed during the slow roast so the lamb effectively braises in its own juices.
- If the pan looks dry at any point, add a small splash of dry white wine and reseal the foil to prevent scorching.
- Food safety: if serving vulnerable groups, ensure the lamb is cooked until piping hot throughout and the juices run clear.
Substitutions
- Replace Fresh oregano with Fresh thyme for a slightly different herbal note.
- Replace Dry White Wine with water if you prefer to cook without alcohol; the flavour will be a little lighter.
- Replace Mixed baby potatoes with Yukon Gold potato, cut into large chunks.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 20–30 minutes until piping hot; add a splash of water if needed to loosen the juices. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
