Paneer Tikka Bowl (Yoghurt-Marinated Paneer with Rice and Mint Yoghurt)
Why this recipe works
- Layered tikka flavour: Yoghurt, garlic, ginger, lemon and warm spices coat the paneer so the flavour clings during grilling.
- Balanced textures: Tender paneer and soft rice are offset by charred vegetables, crisp cucumber and cool mint yoghurt.
- Practical bowl format: Serving paneer tikka over rice turns a grilled appetiser-style dish into a complete vegetarian meal.

Adjust the heat
- For a gentler version: Reduce the Kashmiri chilli and add a little extra lemon or yoghurt to keep the marinade balanced.
- For more heat: Increase the chilli or add a pinch of hotter ground chilli if you want a sharper finish.
Texture tips
- Keep the paneer tender: Grill just until the paneer is hot through and lightly marked; too long under the grill can make it firm and dry.
- Steam-dry the rice: After draining, cover the rice briefly so excess moisture evaporates and the bowl stays fluffy rather than wet.
Make-ahead tips
- Marinate in advance: The paneer can sit in the yoghurt marinade for a short time in the fridge to deepen the spice flavour.
- Store separately: Keep the rice, grilled paneer and vegetables, cucumber and mint yoghurt in separate containers for the best texture.
- Reheat before assembling: Warm the rice and paneer mixture until piping hot, then add the cucumber and mint yoghurt after reheating.
Ingredient notes
- Choose firm paneer: A firm paneer holds its shape better on skewers or a grill tray and is easier to turn without breaking.
- Use fresh mint: Fresh mint gives the yoghurt a clean, cooling finish that dried mint will not replicate as brightly.

Instructions
- Rinse the basmati rice until the water runs mostly clear, then cook it in a saucepan of lightly salted water until tender. Drain well, cover, and leave to steam dry while you prepare the rest.
- In a mixing bowl, stir together most of the greek yogurt (reserve about a third for the mint yoghurt), the garlic, ginger, garam masala, ground cumin, ground coriander, ground Kashmiri chili, a good pinch of fine sea salt, and the juice of half the lemon. Cut the paneer into bite-sized cubes, add to the bowl, and turn gently to coat; set aside to marinate while you prep the vegetables.
- Heat the grill to high. Cut the red onion into chunky wedges and the red pepper into large pieces, then toss with the rapeseed oil and a pinch of fine sea salt.
- Thread the marinated paneer and the vegetables onto skewers if you like, or place them directly on a hot grill tray. Grill for 8 to 12 minutes, turning once or twice, until lightly charred and the paneer is hot through.
- Finely chop the fresh mint and stir it into the reserved greek yogurt with a squeeze of the remaining lemon juice and a pinch of fine sea salt. Slice the cucumber into bite-sized pieces.
- Divide the rice between two bowls and top with the grilled paneer tikka, peppers and onion. Add the cucumber and spoon over the mint yoghurt, then finish with any remaining lemon juice to taste.

Tips
- For deeper flavour, marinate the paneer for 30 minutes if you have time, but keep it chilled while it sits.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised greek yogurt and make sure the paneer is heated until piping hot.
Substitutions
- Replace greek yogurt with whole-milk yogurt for a looser marinade and a lighter mint yoghurt.
- Replace rapeseed oil with olive oil for a fruitier finish.
Storage
- Refrigerate up to 2 days
- Store the rice, grilled paneer and vegetables, and mint yoghurt in separate airtight containers. Reheat the rice and paneer mixture in the microwave until piping hot, and add the cucumber and mint yoghurt after reheating.
