Mixiotes de Pollo (Steamed Chicken Parcels in Chilli Marinade)

In Mexican cooking, mixiote refers to both a parcel-steaming method and the saucy dish it produces, traditionally associated with chilli-marinated meat cooked in a sealed wrapper. Here, bone-in chicken thighs are coated in a smooth tomato, guajillo and ancho marinade sharpened with vinegar and scented with cumin, oregano, garlic and bay. Steaming the parcels keeps the meat tender while concentrating the deep red juices around each piece, so the sauce stays glossy and full-flavoured. Serve the parcels unopened at the table for a simple but distinctive dinner, with rice, beans or warm tortillas to catch the chilli-rich sauce.

Why this recipe works

  • Layered chilli flavour: Cooking the tomato, onion and garlic before blending gives the marinade a fuller base, while guajillo, ancho, cumin and oregano add warm depth.
  • Steamed parcel cooking: Sealing the chicken with the marinade keeps the sauce concentrated around the meat as it steams, producing a tender, juicy result.
  • Bright finish: Apple cider vinegar cuts through the richness of the chicken thighs and sharpens the earthy dried chilli flavour.

Adjust the heat

  • For a gentler sauce: Use a little less chilli powder and lean on the tomato, onion and garlic for body and sweetness.
  • For more heat: Increase the chilli powder gradually, tasting the blended marinade before it goes over the chicken.
  • Keep the heat rounded: Adjust salt and vinegar after blending; enough acidity helps the chilli taste lively rather than heavy.

Timing notes

  • Allow the marinade to work: The hour in the fridge gives the chilli sauce time to season the chicken before steaming.
  • Mostly hands-off time: The active work is in making the marinade and folding the parcels; marinating and steaming account for most of the total time.
  • Rest before opening: A short rest lets the steam settle and keeps the sauce inside the parcel instead of spilling out immediately.

Authenticity notes

  • Parcel steaming: The defining technique is cooking the marinated meat in sealed parcels, so the chicken steams in its own seasoned juices.
  • Practical wrapping: Baking paper is a convenient kitchen substitute for the traditional wrapper while preserving the sealed-steaming method.
  • Serve in the parcel: Opening the wrapping at the table keeps the sauce with the chicken and makes the dish feel generous and aromatic.

Make-ahead tips

  • Marinate in advance: The chicken can sit in the chilli marinade earlier in the day, ready to wrap and steam when needed.
  • Reheat gently: Warm the chicken with its sauce in a covered pan with a splash of water until piping hot.
  • Freeze cooked portions: Freeze the cooked chicken with its sauce in portions, then defrost overnight in the fridge before reheating.

  1. Cut the tomato into chunks. Roughly chop the white onion and peel the garlic.
  2. Heat the sunflower oil in a saucepan over medium heat. Add the tomato, onion and garlic with a pinch of the fine sea salt and cook for 8 to 10 minutes, stirring, until softened and starting to colour.
  3. Add the guajillo chili powder, ancho chili powder, ground cumin and dried oregano, and cook for 30 seconds until fragrant. Add 250 ml water and simmer for 5 minutes to bloom the spices, then take off the heat and cool for 5 minutes.
  4. Blend the sauce until smooth, then blend in the apple cider vinegar and the remaining fine sea salt. Taste and adjust with a little more salt if needed.
  5. Put the chicken thighs in a bowl and pour over the marinade, turning to coat well. Cover and marinate in the fridge for 60 minutes.
  6. Set up a steamer in a large pot with a few centimetres of water and bring to a steady simmer. Lay out 4 large sheets of baking paper and divide the chicken and all the marinade between them, adding a bay leaf to each parcel.
  7. Fold each sheet into a well-sealed parcel, keeping the sauce around the chicken. Steam for 45 to 55 minutes, topping up the water if needed, until the chicken is very tender and the juices run deep red.
  8. Carefully lift the parcels out with tongs and rest for 5 minutes. Serve the mixiotes in their parcels, opening at the table to catch all the sauce.

Recipe notes

Tips

  • Seal the parcels tightly so the sauce stays inside; fold the edges over several times and tuck the ends underneath.
  • Keep the steamer at a gentle simmer rather than a hard boil so the parcels do not burst and the chicken stays juicy.

Substitutions

  • Replace Apple cider vinegar with White wine vinegar for a slightly sharper finish.
  • Replace White onion with Yellow onion for a sweeter, rounder base.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate the chicken with its sauce in a sealed container. Reheat gently in a covered saucepan with a splash of water until piping hot; freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
