Couscous with Seven Vegetables (Moroccan)
Why this recipe works
- Fragrant broth: Blooming ras el hanout, ginger and turmeric in oil gives the vegetable broth a rounded, aromatic base.
- Light grains, tender vegetables: Steamed couscous stays fluffy while the chunky vegetables soften without collapsing.
- Generous serving style: The couscous, vegetables and broth can be served together on a platter or portioned into bowls for an easy complete meal.

Authenticity notes
- Steamed couscous: Steaming the couscous after hydrating helps separate the grains and gives a lighter finish than simply soaking alone.
- Serve with broth: Arrange the vegetables over the couscous and ladle over enough broth to moisten the grains without making them heavy.
Ingredient notes
- Ras el hanout varies: Different blends can be warmer, sweeter or more peppery, so taste the broth before making final seasoning adjustments.
- Choose sturdy vegetables: Root vegetables, squash and cabbage work well because they can simmer until tender while still holding their shape.
Texture tips
- For fluffier couscous: Fluff the couscous thoroughly before steaming and again just before serving to keep the grains separate.
- Keep courgette intact: Add the courgette near the end of cooking so it softens without turning mushy.
Make-ahead tips
- Store separately: Keep the stew and couscous in separate airtight containers so the grains do not absorb too much broth.
- Reheat gently: Warm the stew until piping hot and loosen the couscous with a little water before reheating to restore its texture.
- Freeze the stew: The vegetable stew freezes well; couscous can be frozen too, but is best fresh for the lightest texture.

Instructions
- Set up a steamer over a large pot with a few centimetres of water and bring it to a gentle simmer. Peel and cut the carrot and turnip into chunky batons. Peel and cut the pumpkin into bite-size chunks, then cut the cabbage into large wedges and the courgette into thick pieces.
- Heat the olive oil in a large pot over medium heat and stir in the ras el hanout, ground ginger and ground turmeric for 30 seconds until fragrant. Add the carrot, turnip, pumpkin and cabbage, then pour in the water and season with fine sea salt and black pepper. Bring to the boil, then reduce to a steady simmer.
- Simmer for 25 minutes, stirring occasionally, until the carrot and turnip are nearly tender and the broth is richly coloured. Drain and rinse the chickpeas, then add them to the pot. Add the courgette and simmer for 10 to 12 minutes until all the vegetables are tender but still holding their shape.
- Put the couscous in a mixing bowl and stir through the fine sea salt and olive oil. Pour over the water, cover, and leave for 10 minutes. Fluff with a fork, then transfer to the steamer and steam for 10 minutes, fluffing once halfway through.
- Finely chop the fresh coriander and stir most of it into the stew. Taste and adjust seasoning with a little more fine sea salt if needed. Spoon the couscous onto a serving dish, top with the vegetables, and ladle over plenty of broth, finishing with the remaining coriander.

Tips
- Keep the vegetables in generous chunks so they stay intact during simmering and look good when served over the couscous.
- For the fluffiest couscous, fluff it thoroughly before steaming and again just before serving to separate the grains.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the stew is simmered until piping hot throughout.
Substitutions
- Replace pumpkin with butternut squash for a similar sweetness and texture.
- Replace courgette with aubergine for a richer, more robust vegetable finish.
Storage
- Refrigerate up to 3 days
- Cool the stew and couscous quickly, then refrigerate separately in airtight containers. Reheat the stew in a saucepan over medium heat until piping hot, adding a splash of water if needed; reheat couscous in a steamer or microwave with a spoonful of water to loosen. Freeze the stew for up to 3 months; couscous can be frozen but is best eaten fresh for the lightest texture.
