Su Boregi (Layered Pastry with Feta and Parsley)
Why this recipe works
- Distinctive boiled layers: Briefly boiling the dough sheets before baking gives su böreği its characteristic soft, supple interior rather than a flaky filo-style texture.
- Soft centre, crisp top: Butter between the layers keeps the pastry rich and tender while helping the exposed top bake to a lightly crisp finish.
- Simple, savoury filling: Salty feta, fresh parsley, black pepper, and butter create a clear savoury flavour without overwhelming the pastry.
- Good for serving later: The baked börek slices cleanly after resting and reheats well, making it practical for preparing ahead or serving in batches.

Authenticity notes
- Boiled dough is essential: The brief boiling step is what separates su böreği from many other börek styles, giving the layers their soft, noodle-like tenderness.
- Herb variations: Parsley is classic and widely used, while fresh dill can add a more aromatic, traditional-style note to the cheese filling.
Timing notes
- Rest the dough before rolling: A proper rest relaxes the dough, making it easier to roll thinly without springing back or tearing.
- Let it settle before slicing: Resting the baked börek for about 10 minutes helps the layers set so the squares cut more neatly.
Texture tips
- Drain the sheets well: Let each boiled sheet drain thoroughly before layering; excess water can make the pastry heavy and soften the top.
- Butter the top generously: A final layer of melted butter helps the surface brown evenly and gives the finished börek its delicate crispness.
- Check the centre: Bake until the middle feels set when gently pressed, not just until the edges have browned.
Make-ahead tips
- Reheat on a tray: Warm slices on a baking tray at 180°C (355°F) until piping hot so the top has a chance to re-crisp.
- Freeze baked slices: Cool completely, wrap the slices well, and freeze after baking; thaw before reheating for the best texture.
- Prep the filling ahead: The feta, parsley, and pepper mixture can be prepared ahead and kept chilled while the dough is made fresh for rolling.

Instructions
- Put the plain flour and fine sea salt in a mixing bowl and make a well. Add the eggs, olive oil and most of the warm water, then mix to a shaggy dough, adding the remaining water only if needed. Knead on a lightly floured surface for 8 to 10 minutes until smooth and elastic.
- Cover the dough and let it rest at room temperature so it relaxes and rolls easily. Meanwhile, melt the unsalted butter gently and set it aside to cool slightly. Crumble the feta cheese into a bowl, finely chop the fresh parsley, then mix with the black pepper.
- Divide the dough into 6 equal pieces and keep them covered. Roll one piece into a thin sheet large enough to line a baking dish, then roll the remaining pieces into similarly thin sheets. Aim for sheets that are thin but still strong enough to lift without tearing.
- Heat the oven to 190°C (375°F) and lightly brush a baking dish with a little of the melted butter. Bring a large pot of well-salted water to a steady boil. Set a colander nearby for draining.
- Boil one dough sheet at a time for 30 to 45 seconds, just until it loosens and turns slightly opaque. Lift it out, drain well in the colander, then lay it out flat so excess water can drip off. Repeat with the remaining sheets.
- Lay one boiled sheet in the buttered dish, letting the edges come up the sides, then brush generously with melted butter. Add a second sheet, brush with butter, then scatter over one third of the feta and parsley mixture. Continue layering, brushing each sheet with butter and adding the filling in two more layers, finishing with a top sheet brushed well with butter.
- Fold any overhanging dough neatly over the top and brush with a final slick of butter. Bake for 35 to 40 minutes until the top is lightly browned and crisp, and the centre feels set when gently pressed. Rest for 10 minutes before slicing into squares.

Tips
- Keep the dough pieces covered while you roll so they do not dry out, which makes thin rolling much harder.
- Drain each boiled sheet thoroughly before layering; excess water can make the börek heavy and prevent the top from crisping.
- If serving anyone vulnerable to foodborne illness, use eggs with a recognised safety standard and bake until the centre is piping hot.
Substitutions
- Replace Fresh parsley with Fresh dill for a more aromatic, traditional-style herb note.
- Replace Feta cheese with Goat cheese for a creamier, tangier filling.
- Replace Olive oil with Unsalted butter in the dough for a richer, more tender crumb.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Reheat slices on a baking tray at 180°C (355°F) for 10 to 15 minutes until piping hot and the top re-crisps; freeze well-wrapped slices for up to 2 months and reheat from thawed.
