Creole Red Beans and Rice with Andouille

Red beans and rice is a deeply savoury Louisiana-style comfort dish, traditionally centred on slowly simmered beans served over plain long-grain rice. In this version, dried red kidney beans cook with smoky andouille, onion, celery and green pepper until the liquid turns creamy and well seasoned. Garlic, bay leaves and Cajun seasoning add warmth without overwhelming the beans, while a final mash of some beans gives the pot its characteristic body. It is hearty enough for dinner, reheats well, and suits a relaxed bowl-style meal finished with fresh spring onion.

Why this recipe works

  • Layered savoury base: Browning the andouille first renders smoky fat that flavours the vegetables, beans and stock as they simmer.
  • Naturally creamy beans: A long, gentle simmer softens the beans, while mashing some back into the pot thickens the liquid without needing extra dairy or flour.
  • Good for leftovers: The bean mixture stores and reheats well, especially when kept separate from the rice to preserve texture.

Timing notes

  • Soak the beans ahead: The dried beans need an overnight soak, so start them the day before you plan to cook.
  • Serve once creamy: The beans are ready when fully tender and the cooking liquid has thickened into a spoonable sauce.

Texture tips

  • For a creamier pot: Mash a little more of the cooked beans against the side of the pot, then stir them back through and simmer briefly.
  • Keep the simmer gentle: A steady, low simmer helps the beans soften evenly without breaking down too early.

Ingredient notes

  • Use dried red kidney beans: Dried beans give the dish its traditional creamy texture and absorb the smoky, seasoned stock as they cook.
  • Cajun or Creole seasoning: Cajun seasoning brings a peppery, savoury lift; Creole seasoning can be used for a slightly different spice balance.

Make-ahead tips

  • Store beans and rice separately: Keep the bean mixture and cooked rice in separate containers so the rice does not absorb too much liquid.
  • Reheat gently: Warm the beans on the hob with a splash of water or stock, stirring until piping hot throughout.
  • Freeze the beans, not the bowl: The bean mixture freezes well; cook fresh rice when serving for the best texture.

  1. Put the red kidney beans in a bowl, cover with plenty of cold water, and leave to soak for 8 hours or overnight. Drain and rinse well in a colander.
  2. Finely chop the yellow onion, celery and green pepper. Slice the andouille sausage into rounds and finely chop the garlic.
  3. In a large pot over medium heat, cook the andouille sausage for 4 to 5 minutes until it starts to brown and the fat renders. Add the onion, celery and green pepper and cook for 6 to 8 minutes until softened.
  4. Stir in the garlic and cajun seasoning and cook for 1 minute until fragrant. Add the drained beans, bay leaves, chicken stock, fine sea salt and black pepper, then bring to the boil.
  5. Reduce to a gentle simmer and cook, partially covered, for 60 to 70 minutes, stirring occasionally, until the beans are tender and the liquid is creamy. If it looks dry before the beans are tender, add a splash of water and keep simmering.
  6. While the beans simmer, rinse the long-grain white rice until the water runs mostly clear. Cook it in a saucepan according to packet directions until tender, then cover and rest off the heat for 5 minutes.
  7. Remove the bay leaves. Mash a ladleful of beans against the side of the pot with a wooden spoon, then stir back through to thicken; taste and adjust with a little more fine sea salt and black pepper if needed.
  8. Thinly slice the spring onion. Spoon the rice into bowls, ladle over the red beans and andouille, and finish with the spring onion.

Recipe notes

Tips

  • For a creamier pot, mash a little more of the beans at the end and simmer for 2 to 3 minutes to bring it together.
  • Keep the simmer gentle so the beans soften without breaking up too early; stir more often towards the end to prevent sticking.
  • If serving anyone vulnerable, make sure the beans are fully tender and the dish is piping hot throughout before serving.

Substitutions

  • Replace chicken stock with vegetable broth for a lighter, less meaty base.
  • Replace cajun seasoning with creole seasoning for a slightly different spice balance.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate the beans and rice separately if possible. Reheat the beans gently on the hob with a splash of water or stock until piping hot; reheat rice in the microwave with a tablespoon of water, covered, until steaming.
