Keema Matar (Spiced Minced Lamb with Peas)

In keema matar, minced lamb is cooked into a savoury North Indian-style masala with peas stirred through for sweetness and colour. The dish gets its depth from properly browned onion, ginger, garlic, tomato and warming ground spices, which reduce into a thick sauce that clings to the meat rather than sitting separately. Garam masala and fresh coriander finish it with fragrance. It is hearty without being heavy, easy to serve with basmati rice or warm chapatis, and flexible enough to make slightly drier or more spoonable depending on how you like your keema.

Why this recipe works

  • Layered masala base: Slowly browning the onion, then cooking the ginger, garlic and spices before adding the lamb, builds a deeper savoury base.
  • Sweetness from peas: Peas soften the richness of the lamb and add small bursts of sweetness throughout the curry.
  • Efficient one-pan cooking: The lamb browns, the masala reduces and the curry simmers in the same pan, keeping the method streamlined.

Adjust the heat

  • For less heat: Leave out the green chilli and rely on the garam masala for warmth rather than sharp heat.
  • For more heat: Keep the green chilli and use a hotter variety, or finish with a little extra chilli to taste.
  • Keep the heat rounded: Let the chilli cook with the ginger and garlic so it blends into the masala rather than tasting raw.

Timing notes

  • Prep before heating the pan: Chop the onion, tomato, garlic, ginger and chilli first; once the masala starts cooking, the steps move quickly.
  • Best served hot: Serve once the peas are tender and the sauce is rich and spoonable, before the peas lose their colour.

Ingredient notes

  • Minced lamb richness: Lamb brings natural richness to the curry, so let any excess moisture cook off during browning for a deeper flavour.
  • Frozen peas work well: Add frozen peas near the end so they stay sweet, tender and bright rather than becoming dull.
  • Ghee adds depth: Ghee gives the masala a rounded, nutty richness, though a neutral oil can be used for a lighter finish.

Make-ahead tips

  • Good for meal prep: Keema matar keeps well in the fridge and reheats neatly with a splash of water to loosen the sauce.
  • Freezes well: Cool completely, then freeze in a sealed container; reheat gently until piping hot throughout.
  • Flavour develops: The spice base often tastes more rounded after resting, making leftovers especially useful for quick meals.

  1. Finely chop the onion. Grate the ginger, crush the garlic, and finely chop the green chilli (if using). Roughly chop the tomatoes.
  2. Heat the ghee in a large frying pan over medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and deep golden at the edges.
  3. Stir in the ginger, garlic and green chilli and cook for 1 minute until fragrant. Add the cumin, coriander and turmeric and cook for 30 seconds, stirring so the spices do not catch.
  4. Add the minced lamb and the remaining salt. Turn the heat up to medium-high and cook for 6 to 8 minutes, breaking it up with a wooden spoon, until browned and any liquid has cooked off.
  5. Add the tomatoes and cook for 6 to 8 minutes, stirring, until they break down into a thick masala and the fat begins to separate at the edges. If it starts to stick, add a splash of water and scrape up the browned bits.
  6. Stir in 200 ml water, bring to a gentle simmer, then cover and cook for 10 minutes. Uncover and simmer for 3 to 5 minutes more until rich and spoonable.
  7. Stir in the frozen peas and cook for 3 to 4 minutes until tender and hot. Take off the heat and stir in the garam masala.
  8. Finely chop the fresh coriander and scatter over the top. Taste and adjust the salt if needed, then serve hot.

Tips

  • For a deeper, sweeter masala, take your time browning the onion until properly golden before adding the ginger and garlic.
  • If you prefer a drier keema, simmer uncovered for a few extra minutes at the end until the sauce clings to the lamb.
  • If serving vulnerable groups, make sure the lamb is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace ghee with olive oil for a lighter finish.
  • Replace green chili pepper with 0.5 tsp hot paprika for a gentler, more even heat.
  • Replace fresh coriander with fresh mint for a different, cooling herb note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a saucepan over medium-low with a splash of water, stirring until piping hot; it also freezes well for up to 3 months.
