Palak Dal (Spinach and Yellow Lentil Curry)

In palak dal, soft yellow lentils and fresh spinach come together as a thick, spoonable Indian curry that is both comforting and practical. The lentils provide body and gentle earthiness, while tomato, garlic, ginger, cumin and coriander give the dal a savoury depth without making it heavy. Its defining finish is the hot tempering of mustard seeds, curry leaves, chilli and aromatics, poured over at the end so the flavours stay vivid and fragrant. Serve it with rice for an easy vegetarian dinner, or keep the texture slightly looser for ladling into a bowl.

Why this recipe works

  • Layered aromatics: Simmered lentils form a mellow base, while the final tempering adds fresh aroma from mustard seeds, curry leaves, chilli, ginger and garlic.
  • Naturally thick texture: Yellow lentils soften into a spoonable dal without needing cream, while spinach adds body and colour.
  • Good for leftovers: The dal keeps well in the fridge or freezer and can be loosened with a splash of water when reheated.

Adjust the heat

  • For less heat: Use less green chilli or remove the seeds before slicing.
  • For more heat: Add extra green chilli to the tempering so the heat infuses through the oil and ghee.

Ingredient notes

  • Yellow lentils: Rinse the lentils well before simmering so the finished dal tastes clean and the texture stays smooth.
  • Curry leaves: Fresh curry leaves give the tempering its distinctive aroma; add them carefully as they can splutter in hot fat.
  • Spinach: Add the spinach in handfuls near the end so it wilts without losing all of its colour.

Common mistakes

  • Boiling too hard: Keep the lentils at a gentle simmer; a rapid boil can make them catch on the base of the pan before they soften.
  • Adding the tempering too early: Pour the tempering over the dal as soon as it is fragrant so the curry leaves, mustard seeds and aromatics stay lively.
  • Letting it get too thick: If the dal tightens as it cooks or reheats, loosen it gradually with a splash of hot water.

Make-ahead tips

  • Cook ahead: Cool the dal completely before refrigerating in a sealed container for up to 3 days.
  • Freezer-friendly: Freeze in portions for up to 3 months, then defrost overnight in the fridge before reheating.
  • Reheat gently: Warm in a saucepan with a little water, stirring often, until piping hot throughout.

  1. Rinse the lentils in a colander until the water runs mostly clear. Tip into a large pot with the water, ground turmeric and 1 tsp fine sea salt. Bring to the boil, then reduce to a gentle simmer for 18 to 22 minutes, stirring occasionally, until the lentils are very soft.
  2. Meanwhile, slice the green chilli, peel and finely grate the ginger, and finely chop the garlic. Dice the tomatoes. Wash the spinach and set aside.
  3. Once the lentils are soft, stir in the ground cumin and ground coriander. Add the tomatoes and simmer for 6 to 8 minutes until the tomatoes break down and the dal looks slightly thicker. If it becomes too thick, loosen with a splash of water from the kettle.
  4. Add the spinach in handfuls, stirring until wilted and bright green. Simmer for 2 minutes so everything is hot through. Taste and add the remaining salt if needed.
  5. For the tempering, heat the sunflower oil and ghee in a small saucepan over medium heat. Add the mustard seeds and cook until they start to pop, then add the curry leaves, chilli, ginger and garlic and cook for 60 to 90 seconds until fragrant. Immediately pour the tempering over the dal, stir well, and serve hot.
