Hyderabadi Dum Biryani with Saffron and Rose Water
Why this recipe works
- Layered aromatics: The yogurt marinade, browned onions, whole spices, saffron and rose water build flavour in stages rather than relying on a single spice mix.
- Gentle dum finish: Par-cooked rice finishes by steaming over the chicken, absorbing aroma without becoming heavy or overworked.
- Separate rice, tender chicken: Bone-in thighs stay moist during the simmer, while rinsed and soaked basmati cooks into long, distinct grains.
- Built for sharing: The layered pot serves neatly from top to bottom, giving each portion rice, chicken, herbs and fried onions.

Adjust the heat
- For a milder biryani: Use fewer green chillies or remove the seeds before adding them to the marinade; the saffron, herbs and fried onions will still carry the flavour.
- For more heat: Add extra green chilli to the marinade, or serve chilli pickle alongside so the heat can be adjusted at the table.
- Keep the heat rounded: Avoid overwhelming the floral saffron and rose water with too much chilli; this style works best when the spice supports the aroma rather than dominating it.
Timing notes
- Marinate briefly at room temperature: The short marinade gives the yogurt, ginger and garlic time to season the chicken before cooking. If marinating for longer, refrigerate it.
- Rest before serving: The covered rest after steaming lets the rice settle and makes it easier to spoon through the layers without breaking the grains.
- Most effort comes early: Browning the onions, soaking the rice and layering the pot are the main active steps; once the lid is on, keep it closed so the steam stays trapped.
Ingredient notes
- Use basmati rice: Long-grain basmati is important here because it stays light and separate after soaking, par-boiling and steaming.
- Choose culinary rose water: Use food-grade rose water rather than cosmetic rose water, and keep it restrained so the biryani smells fragrant rather than soapy.
- Let the saffron bloom: Steeping saffron before layering helps release its colour and aroma more evenly through the rice.
Texture tips
- Stop the rice before it is fully cooked: The rice should still feel firm in the centre after boiling; it finishes during the dum stage and stays fluffier as a result.
- Drain the rice well: Letting excess steam escape before layering prevents extra water from weighing down the lower grains.
- Keep the dum heat low: A very gentle heat lets the chicken finish without toughening and gives the rice time to absorb aroma without breaking.

Instructions
- In a mixing bowl, stir together the yogurt, finely grated ginger, crushed garlic, slit chillies and ground cardamom. Add the chicken thighs and turn to coat well. Cover and marinate for 30 minutes at room temperature.
- Meanwhile, rinse the basmati rice in several changes of cold water until the water runs mostly clear, then soak it in cold water for 20 minutes. Put the saffron in a small saucepan with 2 tbsp hot water and leave to steep until deeply coloured. Thinly slice the onions and roughly chop the mint and coriander.
- In a heavy-based casserole over medium heat, melt the ghee. Add the onions and cook, stirring often, for 18 to 22 minutes until deep golden and sweet. Scoop out about two-thirds of the onions for layering later, leaving the rest in the pot.
- Add the cinnamon sticks and bay leaves to the onions left in the pot and cook for 30 seconds until fragrant. Tip in the marinated chicken and any remaining marinade, then bring to a gentle simmer. Cover and cook for 20 minutes, stirring once or twice, until the chicken is mostly cooked and the sauce looks glossy.
- Bring a large pot of water to the boil. Drain the soaked rice, add it to the boiling water and cook for 5 to 6 minutes until the grains are just tender on the outside but still firm in the centre. Drain well in a colander and leave for 2 minutes so excess steam escapes.
- Turn the heat under the chicken down to low and spread the chicken into an even layer. Spoon the par-cooked rice over the top without mixing, then scatter over the reserved fried onions, mint and coriander. Drizzle over the saffron water and rose water.
- Cover the pot tightly with its lid and steam on the lowest heat for 18 to 20 minutes. Turn off the heat and leave, still covered, for 10 minutes to settle. To serve, spoon down through the layers so each portion gets both chicken and rice.
Recipe notes
Tips
- Keep the heat very low during the dum stage; you want gentle steaming, not a hard simmer, so the rice finishes fluffy rather than breaking.
- For the best aroma, crush the saffron threads between your fingers before steeping so they release colour and fragrance quickly.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner biryani; reduce the covered simmering time in step 4 to 12 to 15 minutes so it stays juicy.
- Replace Ghee with Unsalted butter for a similar richness, noting it will brown more quickly so keep the heat slightly lower when frying the onions.
- Replace Rose Water with Orange-blossom-water for a different floral note; use the same amount.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container for up to 3 days. Reheat covered in a 180°C (355°F) oven for 20 to 25 minutes with a splash of water until piping hot, or microwave in short bursts, stirring gently. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
