Bauerntopf (German Minced Beef and Potato Stew)
Why this recipe works
- Deeper savoury base: Softened onions, browned beef, tomato paste and paprika create a rich foundation before the stew simmers.
- Efficient one-pot method: The vegetables, potatoes, beef and broth cook together in the same pot, keeping the workflow simple and the flavour concentrated.
- Hearty texture: New potatoes hold their shape while gently thickening the broth, giving the stew a substantial, spoonable finish.

Ingredient notes
- Use sweet paprika for balance: Sweet paprika gives the broth warmth and colour without making the stew hot. Smoked paprika can be used for a deeper, woodsmoke-style flavour.
- Choose waxy potatoes: New potatoes work well because they stay intact during simmering and help thicken the broth without falling apart completely.
- Add marjoram near the end: Dried marjoram can lose its aroma if boiled for too long, so stirring it in towards the end keeps the flavour more pronounced.
Texture tips
- Keep the simmer gentle: A steady, gentle simmer helps the potatoes cook evenly while keeping the broth clear and the vegetables intact.
- For a thicker stew: Mash a few potato pieces against the side of the pot and stir them back in, then simmer briefly until the broth tightens.
Make-ahead tips
- Good for batch cooking: The stew keeps well in the fridge for several days and reheats gently, making it useful for planned lunches or easy dinners.
- Freezes well: Cool completely before freezing in sealed containers. Defrost overnight in the fridge, then reheat slowly until piping hot.
- Loosen if needed: The potatoes will thicken the broth as the stew stands, so add a splash of water when reheating if it becomes too dense.
Serving ideas
- Serve with bread: A slice of rye bread, sourdough or crusty rolls works well for soaking up the paprika-tomato broth.
- Finish with herbs: Fresh parsley adds colour and a clean finish; chives are a good alternative for a softer onion note.

Ingredients
Instructions
- Peel and finely chop the onion. Peel and crush the garlic, then peel the carrots and slice them; slice the celery. Scrub the potatoes and cut them into bite-sized pieces.
- Heat the olive oil in a large pot over medium heat. Add the onion with a pinch of the salt and cook for 5 minutes until softened, then stir in the garlic for 1 minute until fragrant.
- Add the minced beef and cook over medium-high heat for 6 to 8 minutes, breaking it up with a spoon, until browned with no pink remaining. Stir in the tomato paste and sweet paprika and cook for 1 minute.
- Stir in the carrots, celery and potatoes, then add the chopped tomatoes and beef stock. Bring to a gentle simmer, scraping the base of the pot to lift any browned bits.
- Simmer gently, partially covered, for 20 to 25 minutes until the potatoes are tender and the broth has thickened slightly. Stir in the dried marjoram, black pepper and the remaining salt, then simmer for 2 minutes.
- Finely chop the parsley and stir most of it through the stew. Taste and adjust seasoning, then serve hot with the remaining parsley scattered over the top.
Recipe notes
Tips
- Keep the simmer gentle so the potatoes stay intact and the stew thickens naturally rather than turning cloudy.
- If you prefer a thicker stew, mash a few potato pieces against the side of the pot, then stir them back in and simmer for 2 to 3 minutes.
Substitutions
- Replace Fresh parsley with fresh chives for a milder, oniony finish.
- Replace Sweet paprika with smoked paprika for a deeper, smoky flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over medium-low heat, adding a splash of water if needed, until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
