Tortilla Española with Chorizo (Spanish Potato Omelette)
Why this recipe works
- Smoky depth: The chorizo warms through with the potatoes, releasing paprika-rich oils that season the egg mixture.
- Tender interior: Cooking the potatoes gently before mixing them with the eggs creates a soft, cohesive centre rather than a dry omelette.
- Flexible serving: The tortilla holds its shape well, so it can be served warm, at room temperature, or sliced into wedges for sharing.

Authenticity notes
- Classic base: The method follows tortilla de patatas: potatoes and onion are cooked gently in olive oil before being folded into beaten eggs.
- Chorizo variation: Chorizo adds smoky paprika flavour and richness; it is a common variation rather than an essential part of the classic potato tortilla.
Texture tips
- Keep the potatoes tender: Cook the potatoes slowly rather than browning them; they should soften enough to bind smoothly with the eggs.
- For a firmer set: Cook the second side a little longer if you prefer the centre fully set, especially when serving to anyone who should avoid soft eggs.
- Avoid a dry finish: Remove the tortilla once it is set to your liking and let it rest briefly; the residual heat will help it finish gently.
Ingredient notes
- Best potatoes: Yukon Gold potatoes give a tender, creamy bite, while red potatoes make a slightly firmer tortilla that still slices neatly.
- Choosing chorizo: Spanish-style chorizo brings the characteristic smoked paprika flavour. If using a softer fresh sausage, make sure it is cooked through properly.
Make-ahead tips
- Make ahead: Cool the tortilla completely, then refrigerate it in a sealed container for up to 3 days.
- Reheating: Reheat wedges gently in a frying pan over low heat until piping hot, or serve at room temperature if preferred.

Ingredients
Instructions
- Peel the potatoes, then slice into 3 to 4 mm rounds. Halve and thinly slice the onion, and slice the chorizo into thin rounds.
- Heat the olive oil in a 24 cm frying pan over low to medium-low heat. Add the potatoes, onion, salt and pepper, and cook gently for 20 to 25 minutes, stirring often, until the potatoes are tender but not browned.
- Stir in the chorizo and cook for 2 minutes to warm it through and release its oils. Tip the mixture into a mixing bowl, leaving most of the oil behind in the pan, and let it cool for 5 minutes.
- Beat the eggs in the bowl until well combined, then fold in the warm potato mixture. Leave to stand for 5 minutes so the eggs can soak into the potatoes.
- Set the frying pan over medium heat with 1 to 2 tbsp of the reserved oil. Pour in the egg mixture and cook for 5 to 6 minutes, shaking the pan occasionally, until the edges are set and the centre is still slightly loose.
- Flip the tortilla: place a large plate over the pan, invert, then slide the tortilla back into the pan. Cook for 3 to 5 minutes until set to your liking, then rest for 5 minutes before slicing into wedges to serve warm or at room temperature.
Recipe notes
Tips
- Keep the heat low when cooking the potatoes and onion; you want them tender and sweet, not crisp or browned.
- For a neat flip, choose a plate that fully covers the pan and hold it firmly against the rim as you invert.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the eggs are fully set throughout.
Substitutions
- Replace Spanish chorizo with smoked sausage for a milder, less paprika-forward flavour.
- Replace Yukon Gold potato with red potato for a slightly firmer texture.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Serve at room temperature, or reheat wedges in a frying pan over low heat until piping hot.
