Beef Rouladen (German Stuffed Beef Rolls)

German beef rouladen are slow-braised stuffed beef rolls with a distinctly savoury, tangy character. Thin slices of beef are spread with mustard, filled with bacon, onion and sweet gherkin, then rolled tightly and browned before being gently cooked in stock. The filling seasons the meat from within while the browned pan juices and flour-thickened braising liquid become a rich gravy. It is a dish made for unhurried cooking: the beef should become tender enough to slice cleanly, with plenty of sauce for spooning over potatoes, dumplings or buttered noodles.

Why this recipe works

  • Deep savoury flavour: Browning the beef rolls first builds a rich base for the gravy before the stock is added.
  • Balanced richness: Mustard and sweet gherkins cut through the bacon and beef, keeping the dish savoury rather than heavy.
  • Slow braising: A gentle braise gives the topside time to soften while the filling flavours the sauce from within.

Timing notes

  • Allow time for rolling: Most of the hands-on work is in flattening, filling and securing the beef rolls before they go into the braise.
  • Rest before slicing: Let the rouladen sit briefly after braising so the rolls hold their shape more neatly when cut.

Common mistakes

  • Do not crowd the pan: Brown the rolls in batches so they sear properly rather than steaming.
  • Keep the braise gentle: A rapid boil can make the beef tighten; a low simmer is better for a tender result.
  • Watch the sauce level: If the gravy reduces too much during cooking, add a splash of water so the rolls stay mostly covered.

Make-ahead tips

  • Good made ahead: Rouladen reheat well in their gravy, and the flavour often deepens after resting overnight in the fridge.
  • Freeze with the sauce: Freeze cooked rouladen in portions with plenty of gravy to help keep the beef moist when reheated.
  • Reheat gently: Warm in a covered pan over low heat, loosening the gravy with a little water if needed, until piping hot throughout.

Serving ideas

  • Classic sides: Serve with boiled potatoes, mashed potatoes, spätzle or potato dumplings to soak up the gravy.
  • Add brightness: Braised red cabbage or a crisp cabbage salad works well against the rich beef and bacon filling.

  1. Finely dice the onion and cut the sweet gherkin pickles into thin batons. Pat the beef dry and, if needed, gently flatten each slice between two sheets of baking paper until evenly thin. Season the beef lightly with the fine sea salt.
  2. Lay the beef slices out and spread a thin layer of dijon mustard over each one. Divide the bacon, onion and gherkins between the slices, placing the filling in a line along one short end. Roll up tightly, tucking in the sides as you go, to make neat rolls.
  3. Heat the sunflower oil in a large frying pan over medium-high heat. Brown the rolls well on all sides, 6 to 8 minutes total, working in batches so the pan is not crowded. Transfer the browned rolls to a dutch oven.
  4. Sprinkle the plain flour into the frying pan and stir for 1 minute to cook out the raw taste. Gradually whisk in the beef stock, scraping up the browned bits, until smooth and slightly thickened. Add the bay leaves and black peppercorns, then pour the gravy base over the rolls.
  5. Bring the liquid to a gentle simmer, then cover and braise on low heat for 90 minutes, turning the rolls once or twice, until the beef is very tender. If the sauce reduces too much, add a splash of water to keep the rolls mostly covered. Remove the bay leaves before serving.
  6. Lift the rolls out and rest them for 5 minutes, then slice thickly. Simmer the sauce uncovered for 3 to 5 minutes if you want it a little richer, then taste and adjust seasoning with a pinch more fine sea salt if needed. Serve the sliced rouladen with plenty of gravy spooned over.

Recipe notes

Tips

  • For the neatest rolls, keep the filling in a tight line and roll firmly; if a roll feels loose, press it seam-side down in the pan first to help it hold its shape.
  • Keep the braise at a gentle simmer rather than a rapid boil so the beef stays tender and the sauce remains clear and rich.
  • If serving vulnerable groups, ensure the beef is cooked until piping hot throughout and handle raw meat carefully to avoid cross-contamination.

Substitutions

  • Replace dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
  • Replace sunflower oil with olive oil for browning the rolls.

Storage

  • Refrigerate up to 3 days
  • Cool the rouladen and gravy quickly, then refrigerate in a sealed container. Reheat gently in a covered pan over low heat, adding a splash of water if the gravy has thickened, until piping hot. Freeze in portions with the sauce for best moisture, then defrost overnight in the fridge before reheating.
