Stuffed Peppers with Minced Beef and Rice (Gevulde Paprika)
Why this recipe works
- Hearty and familiar: Minced beef, rice and tomato create a filling, savoury centre with straightforward comfort-food flavours.
- Tomato balances the richness: Passata keeps the beef and rice mixture moist while adding gentle acidity to the baked peppers.
- Easy to prepare ahead: The stuffed peppers reheat well and can be chilled or frozen in portions for later meals.

Ingredient notes
- Choose sturdy peppers: Firm, thick-walled peppers hold their shape best during baking and give the filling enough time to heat through.
- Passata gives a smoother sauce: Tomato passata creates a smoother, more even sauce; crushed tomatoes give a chunkier, more rustic result.
- Drain the rice well: Excess water from the rice can loosen the filling and dilute the tomato sauce.
Timing notes
- Cook the filling before stuffing: Browning the beef and softening the onion first ensures the filling is fully seasoned and properly cooked before baking.
- Rest before serving: A short rest helps the filling settle and makes the peppers easier to serve without collapsing.
Texture tips
- For softer peppers: If the peppers are very thick-walled, cover the dish for the first part of baking, then uncover to finish.
- Keep the filling moist: Spoon the tomato pan juices over the peppers during baking and again when serving.
Make-ahead tips
- Store chilled: Cool completely, then refrigerate in a sealed container for up to 3 days.
- Freeze in portions: Cooked stuffed peppers can be frozen for up to 2 months, then defrosted overnight in the fridge before reheating.
- Reheat covered: Reheat in a 180°C (355°F) oven, covered, until piping hot; add a little water if the sauce has thickened.

Instructions
- Heat the oven to 190°C (375°F). Bring a saucepan of water to the boil, add 1 tsp of the fine sea salt, then cook the rice for 10 to 12 minutes until just tender. Drain well and set aside.
- Meanwhile, slice the tops off the peppers and remove the seeds and pith. Sit the peppers upright in a baking dish; if they wobble, trim a very thin slice from the base to level them. Keep the pepper tops to bake alongside if you like.
- Warm the olive oil in a frying pan over a medium heat. Finely chop the onion, add it to the pan with a pinch of the remaining salt, and cook for 6 to 8 minutes until soft and lightly golden. Crush in the garlic and cook for 1 minute more.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining. Stir in the black pepper and the remaining fine sea salt. Tip in about half of the tomato passata and simmer for 2 minutes to bring it together.
- Take the pan off the heat and stir in the cooked rice until evenly combined. Spoon the filling into the peppers, pressing gently so they are well packed but not crushed. Pour the remaining tomato passata around the peppers in the baking dish.
- Bake for 30 minutes, then spoon a little of the pan juices over the peppers. Bake for a further 10 minutes, or until the peppers are tender and the filling is piping hot. Rest for 5 minutes, then serve with the pan juices spooned over the top.

Tips
- If your peppers are very thick-walled, cover the dish for the first 25 minutes to help them soften, then uncover to finish baking.
- For the juiciest filling, make sure the rice is well drained before mixing so it does not water down the sauce.
- If serving vulnerable groups, ensure the filling is piping hot throughout before serving.
Substitutions
- Replace long-grain white rice with basmati rice for a slightly more fragrant filling.
- Replace tomato passata with canned-crushed-tomatoes for a chunkier sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
