Pork Enchiladas Rojas (Enchiladas Rojas con Carne de Cerdo)
Why this recipe works
- Deep red chilli flavour: The sauce uses softened dried chilli, guajillo chilli powder, cumin, oregano and pork cooking liquid for a rounded, savoury base.
- Sauce-dipped tortillas: Dipping warm corn tortillas in the red sauce before rolling gives the enchiladas their recognisable colour, flavour and soft texture.
- Tender pork filling: Slow-simmered pork shoulder shreds easily and stays juicy inside the tortillas during the short bake.

Adjust the heat
- For a milder sauce: Use a gentler dried red chilli and reduce the guajillo chilli powder slightly, then balance with a little extra vinegar if needed.
- For more heat: Choose hotter dried chillies or add a small amount of extra chilli powder when blending the sauce.
- Keep the heat rounded: Simmering the chilli sauce briefly after blending helps the spices settle and prevents the heat from tasting harsh.
Timing notes
- Most of the time is hands-off: The pork takes the longest, but the active work is mainly browning, blending the sauce and rolling the enchiladas.
- Serve soon after baking: The enchiladas are best while the sauce is glossy and the tortillas are soft rather than fully absorbed.
Make-ahead tips
- Cook the pork in advance: The pork and sauce can be prepared ahead, then assembled with freshly warmed tortillas before baking.
- Keep components separate if possible: For the best texture, store the shredded pork and sauce separately from the tortillas until you are ready to assemble.
- Reheat covered: Reheat covered in a 180°C (355°F) oven until piping hot, adding a little stock if the sauce has thickened too much.
Ingredient notes
- Use corn tortillas: Corn tortillas give enchiladas rojas their characteristic flavour and structure; warming them first helps prevent cracking.
- Blend the sauce very smooth: A well-blended sauce coats the tortillas evenly and gives the finished dish a more polished texture.
- Cheese changes the finish: Queso fresco keeps the topping fresh and crumbly, while cotija gives a firmer, saltier result.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Peel and halve the onion, then peel the garlic.
- Season the pork all over with 1 tsp of the fine sea salt and the black pepper. Heat 1 tbsp of the vegetable oil in a dutch oven over medium-high heat, then brown the pork well on all sides.
- Add the onion, garlic and chicken stock, bringing it to a gentle simmer. Cover and cook on low for 55 to 60 minutes, turning the pork once or twice, until very tender and shreddable.
- Lift the pork onto a plate and cover loosely to keep warm. Strain the cooking liquid into a saucepan, reserving the onion and garlic, then skim off any excess fat from the surface.
- Add the dried red chili to the hot stock and simmer for 8 to 10 minutes until softened. Tip the stock and chilies into a blender with the reserved onion and garlic, then add the guajillo chili powder, ground cumin, dried oregano, remaining 1 tsp fine sea salt and the apple cider vinegar.
- Blend until very smooth, then return the sauce to the saucepan and simmer for 5 minutes to thicken slightly; it should coat the back of a spoon. Taste and adjust with a pinch more fine sea salt if needed.
- Shred the pork into bite-sized strands, discarding any large pieces of fat. Heat the remaining 1 tbsp vegetable oil in a frying pan over medium heat and warm the tortillas for 10 to 15 seconds per side, just until pliable.
- Pour a thin layer of the red sauce into a baking dish. Dip each tortilla into the sauce, fill with a line of shredded pork, roll up and place seam-side down in the dish, packing them snugly.
- Spoon the remaining sauce over the enchiladas, covering them evenly. Bake for 12 to 15 minutes until hot throughout and bubbling at the edges.
- Crumble the queso fresco over the top. Serve straight away while the tortillas are soft and the sauce is glossy.
Recipe notes
Tips
- For a smoother sauce, blend for a full minute, then pass it through a sieve-strainer back into the saucepan.
- If your tortillas crack when rolling, warm them a little longer in the oil so they become fully pliable before dipping in sauce.
- If serving vulnerable groups, ensure the pork is cooked until piping hot throughout and the juices run clear before shredding.
Substitutions
- Replace Pork shoulder with Pork tenderloin for a leaner filling; simmer until just tender, then shred.
- Replace Queso fresco with Cotija cheese for a saltier, firmer topping.
- Replace Apple cider vinegar with White wine vinegar for a cleaner, sharper tang.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of chicken stock if the sauce has thickened. Freeze (preferably without the queso fresco topping) for up to 2 months and defrost overnight in the fridge before reheating.
