Gammon Steaks with Parsley Sauce and Mash
Why this recipe works
- Balanced richness: Lemon juice and Dijon mustard sharpen the creamy parsley sauce and stop the dish feeling too heavy.
- Smooth sauce and mash: A simple roux gives the sauce body, while steam-drying the potatoes before mashing helps keep them fluffy rather than watery.
- Hearty and familiar: Salty gammon, buttery mash and warm parsley sauce make a satisfying plate with classic British dinner flavours.

Ingredient notes
- Check the gammon’s saltiness: Gammon varies in salt level. If it tastes especially salty, a short soak in cold water before cooking helps soften the seasoning.
- Use fresh parsley if possible: Fresh parsley gives the sauce its clean, grassy finish. Dried parsley will not bring the same colour or brightness.
Texture tips
- For a lump-free sauce: Whisk the milk into the roux gradually so the flour disperses evenly before the sauce thickens.
- For better mash: Let the drained potatoes steam-dry briefly in the hot pot before adding butter and milk; this improves the texture and prevents watery mash.
Common mistakes
- Do not brown the roux: Cook the flour and butter just until biscuity-smelling. If it colours too much, the parsley sauce can taste toasted rather than clean and creamy.
- Avoid harsh heat on the sauce: Keep the sauce at a gentle simmer once the milk is added. Boiling can make it catch on the pan or thicken unevenly.
Make-ahead tips
- Reheat gently: Warm leftovers slowly until piping hot, adding a splash of milk to loosen the mash or sauce if needed. Avoid boiling the parsley sauce.
- Best served freshly made: The gammon and mash have the best texture straight after cooking, while the sauce is smoothest before refrigeration.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then cook for 15 to 18 minutes until very tender.
- While the potatoes cook, finely chop the parsley and cut the lemon in half. Pat the gammon dry and season with the black pepper. Set a saucepan on the hob ready for the sauce.
- Heat a large frying pan over medium-high heat and add 20 g of the unsalted butter. Pan-fry the gammon for 2 to 3 minutes per side until golden and heated through. Transfer to a warm plate.
- In the saucepan, melt 20 g of the remaining butter over medium heat. Stir in the plain flour and cook for 1 minute, stirring, until it smells biscuity but has not coloured. Gradually whisk in 250 ml of the whole milk until smooth.
- Simmer the sauce for 3 to 4 minutes, whisking often, until thick enough to coat the back of a spoon. Stir in the Dijon mustard, the chopped parsley, and a squeeze of lemon juice. Taste and season with the remaining fine sea salt and more lemon juice if needed.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam-dry. Mash with the remaining butter and the remaining whole milk until fluffy and smooth. Serve the gammon with the mash and spoon over the parsley sauce.
Recipe notes
Tips
- If your gammon is particularly salty, soak it in cold water for 20 minutes, then pat dry before frying.
- For the smoothest sauce, add the milk gradually and whisk constantly so the roux stays lump-free.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the gammon is cooked until piping hot throughout.
Substitutions
- Replace Whole milk with Low-fat milk for a lighter sauce and mash, adding a little extra Unsalted butter for richness if you like.
- Replace Fresh parsley with Fresh chives for a milder, oniony finish.
- Replace Dijon mustard with Whole-grain mustard for a coarser texture and gentler heat.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the mash with a splash of Whole milk in a saucepan over low heat, and warm the gammon and sauce gently until piping hot; avoid boiling the sauce.
