Thai Basil Aubergine Stir-Fry

Glossy aubergine, fresh Thai basil and a salty-savoury wok sauce give this stir-fry its recognisable Thai-inspired character. The aubergine is cooked over high heat until soft at the centre with lightly browned edges, then coated in oyster sauce, light soy, fish sauce, a little sugar and lime for depth, saltiness and brightness. Garlic and chilli bring fragrance and heat, while the basil is added off the heat so it stays vivid and aromatic. Served straight away with jasmine rice, it is a fast, satisfying dinner where the texture of the aubergine and the herbal finish matter as much as the sauce.

Why this recipe works

  • Fast, high-heat cooking: A hot wok softens and browns the aubergine quickly, keeping the dish practical for a weeknight meal.
  • Deep savoury balance: Oyster sauce, soy sauce and fish sauce bring umami depth, while sugar and lime round out the saltiness.
  • Fresh aromatic finish: Thai basil is folded through off the heat so its peppery, herbal character stays vivid.

Adjust the heat

  • For less heat: Remove the chilli seeds before slicing, or use a smaller amount of chilli while keeping the garlic and basil for aroma.
  • For more heat: Leave the chilli seeds in, or use a hotter fresh chilli if you want a sharper finish.

Texture tips

  • Tender aubergine: Cut the aubergine into even bite-sized pieces so it softens at the same rate in the wok.
  • Avoid overcrowding: Cook the aubergine in batches if needed; a crowded wok steams the pieces instead of giving them browned edges.

Ingredient notes

  • Choose firm aubergines: Look for glossy skins and firm flesh, as older aubergines can cook down unevenly and taste slightly bitter.
  • Use fresh Thai basil: Fresh Thai basil is important here; dried basil will not give the same bright, peppery finish.

Make-ahead tips

  • Prep before heating the wok: Slice the vegetables and mix the sauce before you start cooking, as the stir-fry moves quickly once the aubergine is in the pan.
  • Reheat briskly: Reheat leftovers in a hot wok or large frying pan with a splash of water until piping hot, adding fresh basil afterwards if possible.

  1. Cook the jasmine rice in a saucepan of boiling water until tender, then drain well and cover to keep warm. While it cooks, cut the aubergine into bite-sized chunks, thinly slice the garlic, and finely slice the red chilli. Pick the Thai basil leaves from the stems.
  2. Stir together the oyster sauce, light soy sauce, fish sauce and caster sugar, then squeeze in the juice from half the lime. Set the sauce by the hob so it is ready to go into the wok quickly. Cut the remaining lime into wedges for serving.
  3. Heat the vegetable oil in a wok over high heat until shimmering. Add the aubergine and stir-fry for 6 to 8 minutes until softened and glossy, with some browned edges. If the pan looks dry, lower the heat slightly and keep tossing so it cooks evenly.
  4. Add the garlic and red chilli and stir-fry for 30 to 60 seconds until fragrant. Pour in the sauce and toss for 1 to 2 minutes until it clings to the aubergine and looks slightly thickened. Take off the heat and fold through the Thai basil until just wilted.
  5. Serve the stir-fry straight away with the warm jasmine rice. Finish with a squeeze of lime to taste. Eat while the basil is still bright and aromatic.

Jasmine rice

Tips

  • Keep the wok hot and avoid overcrowding; if your wok is small, cook the aubergine in two batches using the same vegetable oil, then return everything to the wok to sauce.
  • For a cleaner heat, remove the chilli seeds before slicing; for more heat, leave them in.
  • If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the rice is served piping hot and cooled leftovers are chilled promptly.

Substitutions

  • Replace the red chili pepper with a smaller amount of red chili pepper for a milder stir-fry.
  • Replace the lime with extra lime at the table if you prefer a brighter finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in an airtight container. Reheat in a hot wok or large frying pan with a splash of water until piping hot; add the fresh Thai basil after reheating if you want the flavour to stay punchy.
