Lamb Hotpot
Why this recipe works
- Deep savoury base: Browning the lamb before simmering builds richness, while Worcestershire sauce, bay and thyme add depth without masking the meat.
- Classic comfort texture: The lamb becomes tender in the sauce as the potato layer bakes into a soft, golden-topped crust.
- Casserole-style cooking: The stew and potato topping cook together in one dish, keeping the method practical while allowing the flavours to settle into the sauce.

Timing notes
- Rest before serving: Let the hotpot stand briefly after baking so the sauce thickens slightly and the potato layer is easier to serve.
- Mostly hands-off cooking: The main work is browning the lamb and slicing the potatoes; the long simmer and bake do most of the tenderising.
Texture tips
- Keep the simmer gentle: A steady, gentle simmer helps the lamb soften without tightening, giving a more succulent result.
- Slice potatoes evenly: Even slices cook at the same rate and create a neater topping with tender centres and lightly browned edges.
Make-ahead tips
- Good for making ahead: The flavours deepen after chilling, making this a strong make-ahead dish for the next day.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a little stock if the sauce has thickened too much.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge before reheating thoroughly.
Ingredient notes
- Use lamb shoulder: Lamb shoulder suits slow cooking because it becomes tender and gives the sauce a rounded, savoury flavour.
- Choose waxy potatoes: Yukon Gold-style potatoes hold their shape well while still becoming soft and buttery as they bake.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Slice the onion and cut the carrot into thick coins. Cut the lamb into bite-sized pieces.
- Melt half the butter in a casserole over medium heat. Add the onion and carrot and cook for 8 to 10 minutes until softened and lightly golden. Tip into a bowl.
- Melt the remaining butter in the casserole and raise the heat to medium-high. Add the lamb and cook for 6 to 8 minutes, turning, until well browned. Sprinkle over the plain flour and black pepper, then stir for 1 minute.
- Slowly pour in the lamb stock, stirring to avoid lumps, then stir in the Worcestershire sauce. Return the onion and carrot to the pot, add the bay leaves and thyme, and bring to a gentle simmer. Cover and simmer for 45 minutes, stirring once or twice, until the lamb is starting to turn tender.
- Meanwhile, peel the potatoes and slice them thinly. Taste the stew and adjust with a little more black pepper if you like. Remove the thyme sprigs and bay leaves.
- Arrange the potatoes over the lamb in overlapping circles, covering the surface. Bake uncovered for 45 to 55 minutes until the potatoes are tender and golden at the edges and the sauce is bubbling around the sides. Rest for 10 minutes before serving so the sauce settles slightly.
Recipe notes
Tips
- Slice the potatoes evenly so they cook at the same rate; a mandoline makes this quick, but a sharp knife works well.
- Keep the stew at a gentle simmer rather than a rapid boil so the lamb stays succulent and the sauce thickens smoothly.
- If serving vulnerable groups, make sure the hotpot is piping hot all the way through before serving.
Substitutions
- Replace Lamb shoulder with Lamb stew meat for a similar result and slightly quicker trimming.
- Replace Fresh thyme with dried thyme, using a smaller amount for a more concentrated flavour.
- Replace Unsalted butter with ghee for a slightly nuttier richness and a higher cooking temperature.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a 180°C (355°F) oven until piping hot, adding a splash of lamb stock if the sauce has thickened too much. Freeze for up to 3 months; defrost overnight in the fridge before reheating.
