Fusion Shrimp Noodle Bowl
Why this recipe works
- Fast but complete: Rice noodles cook quickly while the vegetables and dressing are prepared, keeping the whole bowl within weeknight timing.
- Bright, balanced dressing: Lime sharpens the soy and sesame dressing, giving the noodles freshness rather than heaviness.
- Fresh texture contrast: Tender prawns and soft noodles are balanced by cucumber, carrot and spring onion for a crisp finish.

Texture tips
- Drain the noodles well: After rinsing, let the noodles drain thoroughly so the dressing stays punchy and does not become watered down.
- Keep the prawns just cooked: Remove the prawns from the pan as soon as they are pink and opaque to keep them tender.
Ingredient notes
- Use fresh aromatics where possible: Fresh ginger and garlic give the dressing a cleaner, brighter flavour than dried alternatives.
- Choose crisp vegetables: Cucumber, carrot and spring onion work well because they stay crunchy against the soft noodles.
Make-ahead tips
- Keep components separate: For the best texture, store the dressed noodles and prawns separately from the raw vegetables and herbs.
- Reheat gently if serving warm: Warm the noodles and prawns gently in a frying pan with a splash of water until piping hot, then add the fresh toppings.

Ingredients
Instructions
- Bring the water to the boil in a saucepan. Cook the rice noodles according to the packet timing until just tender, then drain in a colander and rinse briefly under cold water. Leave to drain well.
- In a mixing bowl, whisk together the soy sauce, the juice of the lime and 1 tbsp of the sesame oil. Finely grate in the garlic and ginger, then stir to combine. Set aside while you prep the vegetables.
- Cut the cucumber into thin matchsticks, shred the carrot, and thinly slice the spring onion. Roughly chop the fresh coriander. Keep everything separate so the bowl stays crisp.
- Heat the remaining sesame oil in a large frying pan over medium-high heat. Add the prawns and cook for 2 to 3 minutes, turning, until pink and just cooked through. Tip the prawns into the dressing and toss well.
- Add the drained noodles to the bowl and toss until evenly coated, then divide between two bowls. Pile over the cucumber, carrot and spring onion. Finish with fresh coriander and sesame seeds, and serve straight away.

- For food safety, cook the prawns until fully pink and opaque all the way through, especially for anyone who is vulnerable.
Substitutions
- Replace Sesame oil with Toasted sesame oil for a deeper, nuttier flavour.
- Replace Lime with Lemon for a similar citrus lift.
Storage
- Refrigerate up to 2 days
- Store leftovers in an airtight container in the fridge. Eat cold, or warm the noodles and prawns gently in a frying pan with a splash of water until piping hot; add the coriander just before serving.
