Quiche Lorraine with Green Salad
Why this recipe works
- Crisp pastry, soft filling: Chilling and pre-baking the pastry helps keep the base crisp against the creamy custard.
- Deep savoury flavour: Bacon, Gruyère and black pepper give the custard a rich, salty depth without needing many ingredients.
- Flexible serving: The quiche slices neatly after resting and works well warm or at room temperature with a sharp green salad.

Timing notes
- Rest before slicing: Let the quiche stand for about 10 minutes so the custard finishes setting and cuts cleanly.
- Serve warm or room temperature: The filling should be set but still tender; avoid serving it straight from the oven when it is most fragile.
Texture tips
- For a crisper base: Keep the pastry cold before baking and bake the empty case until the surface looks dry and lightly coloured.
- For a softer custard: Bake only until the centre has a slight wobble; it will continue to firm up as it rests.
Authenticity notes
- Lorraine-style roots: Quiche Lorraine is the classic savoury tart associated with Lorraine in north-eastern France, built around bacon and a cream-rich custard.
- Cheese is a common addition: Gruyère is widely used in modern versions, adding a nutty savoury layer to the bacon filling.
- Salad balances the richness: A mustardy green salad is a traditional-feeling match because its acidity cuts through the buttery pastry and custard.
Make-ahead tips
- Bake ahead: The quiche can be baked in advance, cooled completely and kept covered in the fridge.
- Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot, which helps revive the pastry better than microwaving.
- Freeze cooked slices: Wrap cooled slices well, freeze, then defrost overnight in the fridge before reheating.

Instructions
- Heat the oven to 190°C (375°F). Tip the flour and salt into a bowl, rub in the cold butter until it looks like fine crumbs, then mix in 1 egg and enough cold water to bring it together into a dough. Shape into a disc and chill for 20 minutes.
- Roll the pastry out and line a 23 cm tart tin, pressing it neatly into the corners. Prick the base all over with a fork and chill for 10 minutes to help it hold its shape. Bake for 15 minutes until the base looks dry and just starting to colour.
- Meanwhile, fry the bacon over a medium heat for 6 to 8 minutes until golden, then drain off any excess fat. Scatter the bacon over the warm pastry case and sprinkle over the Gruyère. Reduce the oven to 170°C (340°F).
- Whisk the remaining eggs with the double cream, black pepper and a pinch of salt. Pour into the pastry case and bake for 25 to 30 minutes until lightly golden and just set with a slight wobble in the centre. Rest for 10 minutes before slicing.
- Whisk the Dijon mustard with the white wine vinegar and salt, then slowly whisk in the olive oil until glossy. Toss with the mixed salad greens. Serve the quiche warm or at room temperature with the salad alongside.
Recipe notes
Tips
- For a crisp base, keep the pastry and tin well chilled before baking, and avoid overworking the dough.
- The quiche is ready when the centre still has a gentle wobble; it will finish setting as it rests.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for raw and lightly cooked dishes and bake until the centre is fully set.
Substitutions
- Replace Gruyère cheese with Emmental cheese for a milder, nuttier finish.
- Replace white wine vinegar with champagne vinegar for a softer acidity in the dressing.
- Replace Dijon mustard with whole-grain mustard for a coarser texture in the vinaigrette.
Storage
- Refrigerate up to 3 days
- Cool the quiche completely, then refrigerate well covered. Reheat slices in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, or serve at room temperature. Freeze wrapped slices for up to 2 months; defrost overnight in the fridge before reheating.
