Spezzatino di Manzo (Italian Beef Stew)
Why this recipe works
- Deep savoury base: Browning the beef and softening the onion, carrot and celery in the same pot builds a rounded sauce before the liquid is added.
- Slow, gentle cooking: A low simmer gives beef chuck time to become tender while the tomato, wine and stock reduce into a spoon-coating sauce.
- Improves as it rests: The stew reheats well, and the sauce thickens slightly as it stands, making it practical for cooking ahead.

Ingredient notes
- Choose the right cut: Beef chuck works well because it has enough connective tissue to become tender during a long simmer.
- Use a drinkable red wine: The wine reduces into the sauce, so choose one with a clean, savoury flavour rather than anything overly sweet.
- Alcohol-free option: For an alcohol-free stew, replace the wine with beef stock as noted in the recipe; the flavour will be softer but still rich.
Common mistakes
- Do not crowd the beef: Brown the meat in batches if needed so it sears properly rather than steaming in the pot.
- Avoid a hard boil: Keep the stew at a gentle simmer; vigorous boiling can tighten the meat before it has time to soften.
- Watch the sauce thickness: If the sauce reduces too far before the beef is tender, loosen it with a small splash of water and continue cooking gently.
Make-ahead tips
- Cook ahead if convenient: Spezzatino can be made in advance and reheated gently, which makes it useful for relaxed dinners or meal prep.
- Reheat slowly: Warm it over low heat, stirring occasionally, and add a little water if the sauce has thickened too much.
- Freezes well: Cool completely before freezing, then defrost overnight in the fridge before reheating until piping hot.
Authenticity notes
- Home-style Italian stew: Spezzatino is typically a rustic, slow-cooked dish built around tender meat and a well-reduced sauce rather than a brothy finish.
- Classic serving: Creamy polenta and crusty bread are natural pairings because they soak up the rich tomato and wine sauce.

Ingredients
Instructions
- Cut the beef into 3 to 4 cm chunks. Finely chop the onion, carrot and celery, and finely chop the garlic. Strip the rosemary leaves from the sprigs and roughly chop them.
- Heat the olive oil in a dutch oven over medium-high heat. Add the beef in a single layer (work in batches if needed) and brown well on all sides, 8 to 10 minutes total. Transfer the browned beef to a bowl.
- Reduce the heat to medium and add the onion, carrot and celery to the pot. Cook, stirring and scraping up the browned bits, until softened and lightly golden, 8 to 10 minutes. Stir in the garlic and cook for 1 minute until fragrant.
- Pour in the red wine and bring to a lively simmer, stirring to deglaze the pot. Simmer for 3 to 5 minutes to reduce slightly. Add the rosemary, bay leaves and black pepper.
- Return the beef and any juices to the pot, then stir in the tomato passata and beef stock. Bring to a gentle simmer, then cover with the lid slightly ajar and cook on low for 1 hour 45 minutes to 2 hours, stirring occasionally, until the beef is very tender and the sauce coats a spoon. If the sauce thickens too much, add a small splash of water to loosen it.
- Remove the bay leaves and rosemary stems (if any remain). Taste and adjust with a little more black pepper if you like. Serve hot with creamy polenta or crusty bread.
Recipe notes
Tips
- For the best texture, keep the stew at a gentle simmer rather than a rapid boil so the beef turns meltingly tender.
- If you are serving later, let the stew cool in the pot for 20 minutes, then reheat gently; the sauce will thicken as it stands.
- Alcohol does not fully cook off; if serving children or anyone avoiding alcohol, use the substitution below.
Substitutions
- Replace Red wine with Beef stock for an alcohol-free version; add it in the same amount and simmer for 2 minutes before continuing.
- Replace Fresh rosemary with Bay leaves (use 1 extra) for a softer herbal note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob over low heat, stirring occasionally, until piping hot; add a splash of water if the sauce has thickened too much. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
